Roquefort Pear Salad

I substituted apples for the pears and feta for the blue cheese b/c that's what I had on hand. AMAZING salad!

One-Dish Chicken, Vegetable and Rice Bake

Wonderful dish! I didn't have flavored rice, so I used brown rice with a packet of Lipton's Onion Soup mix. I diced 2 large chicken beasts and mix it all together before baking. I used frozen peas & broccoli. Cooked an extrta 10 minutes after uncovering and adding extra cheese on top. Turned out perfect. My very picky 4 year old even ate it and said it was yummy! Thank you for a great base recipe!

Herb Biscuit Loaf

Used 1/2 the amount of biscuits in a round cake pan & did not fold. Used the full amount of other ingredients and poured remaining butter on top. Baked at 350 for 20 minutes and they came out perfect! Will definitely be making this again!

Andrea's Pasta Fagioli

Followed receipe exactly. It came out as a mostly pasta dish with a little bit of sauce/liquid. Next time I will only use 1 c. of the pasta and add it to the soup AFTER it has simmered for 1 hour. That way the pasta will not absorb all the liquid. It was also very bland tasting. I think I'm going to add a can of diced tomatoes and use chicken broth instead of plain water.

Baked Potato Soup

I first followed the recipe exactly and thought the basil was way overpowering and the hot sauce addition wasn't very good. My husband puts hot sauce on EVERYTHING and he even said it wasn't needed. The second time making it, I made some adjustments - I only put in 1/2 the basil, left out the hotsauce, substituted half the cream with 2% milk and added 2 tbs. of sour cream. I also added about a cup of shredded cheddar to the soup and saved the rest of the cheese and bacon for garnish. The second time was PERFECT!!!!! I doubled the batch for 4 people and there were no leftovers!

Actually Delicious Turkey Burgers

I made these exactly like the receipe called for with no changes and they were a big hit at a family cookout. There were 2 guys there that would never consider eating a Turkey burger and they even said these were "actually pretty good". That's saying a lot coming from these two! This will definitely become my staple Turkey burger recipe!

Perfect Pumpkin Pie

I used this recipe to make pumpkin pies for Thanksgiving this year. My father-in-law has now requested I make them again for Christmas. He said it was the closest recipe to the pies his mom used to make. I think I've just started a new tradition in our family with this recipe!!

Mexican Chicken Kiev

My favorite chicken recipe! I don't usually like chicken, but I found this recipe and thought I'd try it. I'm so glad I did! I've made this for my fiance and friends and everyone raves about it. I used monterrey jack pepper cheese and did not use the green chilis. Worked great! This also is a great recipe to make the night before and pop it in the oven the next day! Thanks Erin for sharing!
