Absolutely Ultimate Potato Soup
I've adjusted this recipe a bit over a few batches. That said, the recipe is pretty good as-is.
Instead of cubing the potatoes and then blending the soup later, I used 7 shredded russet potatoes and 5 cubed gold potatoes, no blending. I think red potatoes would also be really good for cubing. Also I doubled the bacon and onion, added about a cup of shredded carrots, and used 1L chicken broth and topped it up with beef broth (about 500mL, enough to cover potatoes).
Also, FWIW, corn starch is much faster acting than flour as a thickener.
