Panettone Bread Pudding with Spiced Orange Sauce

I wanted to like this BUT I didn't. It baked well, was the consistency that I was hoping for but it tasted too much like fruit cake. It had this taste/flavor that was NOT appealing...to me. Plenty of people may like fruit cake and this is for them. I will try this again with a different bread.

I was looking for something fool proof and I suppose basic. I wanted to make beans for "rice bowls" that I wanted to have for dinner. Rice, corn, shredded chicken, beans, shredded cheese and avacado = in no particular order. I was afraid to add salt but 2nd try I went ahead and added half at beginning, better (to me) than adding during last half hour. This recipe makes a good bean. *** also I've now started to keep bacon fat in a container in the fridge vs. tossing after making bacon ***

Lemon Pie Bars

This was easy, quick and to the point. I ended up using reg sugar for the crust because that's what I had on hand(worked fine). 2 good sized lemons= 1/2 cup lemon juice. When I make these again, and I definitely will, I will add a few drops of yellow food coloring, as these were virtually colorless. This of course is really a non issue but for presentation sake this is what I will do.

My Amish Friend's Caramel Corn

This was pretty good. And sounds worse than it actually is. I'm wondering though how it would taste with just 1/2 cup of margarine. I used the full cup (1 stick of butter and 1 stick of margarine)and do feel it's a bit...not oily at least not by touch but taste. It melts in your mouth and I cant help but think that's the butter talkin. I will see what happens if I decrease this a bit. Sprayed 2 jelly roll pans with cooking spray and wiped off excess with paper towel. Used 2 bags of a generic butter microwave popcorn- sifted kernels and hulls out. placed 1 bag on each pan, mounded them in middle of pan, poured caramel on in a long row then used rubber spatula to coat the popcorn with caramel...THIS STUFF IS HOTTTT be careful (duh right? but still). Placed both pans in oven and set timer to beep at 20 minutes to remind me to stir. I did this 2 and a half times so popcorn was in oven for total of

Carol's Chicken Salad

Yum! made for a summer picnic. Mom and sister loved this chicken salad. My favorite chicken salad recipe so far. I haven't used the Swiss cheese yet and will not be using water chestnuts- just don't like em. I like another reviewer's suggestion of using sour cream as well as mayo -will try that next.

Clone of a Cinnabon

dunno what happened- I had such high hopes for these buns. My hubby complained that they were not "lite". I gotta try these again. Something went wrong although I did follow the recipe.(I did not use a bread machine) The dough doubled just like it was supposda both times but dough was DRY??? Maybe start with 4c of flour???? They looked GREAT, tasted aight, texture bleh. Will update.

Asian Orange Chicken

this was easy and great! I enjoyed it. Completely forgot to double the sauce b/c I doubled the chicken. Hubby and daughter both liked it. Made white rice n steamed broccoli medley to accompany. Will be adding this to my rotation. Something nice to do with chicken, and I was just gonna throw it in the oven...

Skinny Scalloped Potatoes

This is a nice EASY and simple recipe! I LUV it when I run across a recipe that calls for ingredients that I have on hand. This is a good flavorful dish that doesn't require any special attention. You scrub or peel potatoes, whip up the other ingredients, layer, pour and you are good to go. I often have a chicken "base" on hand and use that instead of broth. Also I use what ever milk and cheese I happen to have in the fridge. My husband LOVES this dish and I also love that it's something "else" to do with potatoes.

White Chocolate Raspberry Cheesecake

Yum yum yummity yum! I am in LOVE with this cheesecake. Delish. everyone luved it!!! I used what I had on hand and so didn't make chocolate crust just plain ole graham cracker(with a dash of cinnamon-no real reason for this, just did) I used heavy whipping cream and only had 3- 4oz white chocolate bars. I cracked these up and threw them in a bowl with the cream and microwaved for 20seconds then 20 more, worked great. I had raspberry preserves and used that in this recipe. I shoulda used a bunch more but I was worried because it wasn't seedless. I nuked a bout 1/4c. Again, next time-and there will be a next time- I will use more. Only tiny complaint is that I may have added a bit more than 1/2c sugar, maybe. And if that is what I may have done then next time I will NOT do that and add a bit less than 1/2c(was just a tad bit onda sweeeet side- where it may cross the line and appear to be too sweet, and we don't want that) Sooooo. Make this cheesecake and everyone will enjoy it and it will be better than a "plain" cheesecake and prettier too.

Chicken Tinga Tostados

I liked this recipe all right. Easy simple steps. I am not an onion person but can tolerate them cooked, and so used only 2 medium, also used only 3 chipotle peppers b/c I was cooking this meal for my family (small ppl included)- and for the little ones and my teenager this was still too spicy. Did I mention salt???This NEEDS salt, salt, salt, salt- perhaps a lil bit more of the bouillon granules? I added salt when boiling the chicken but apparently not enough. This was also great assembled without the beans. Very easy to pull this together

Marshmallow Fondant

This was grrrreat! I'm supposda say frugal but I'll be the first to say I'm CHEAP! My sister wanted me to help make my niece's birthday cake and wanted me to bring the fondant. Ha! I one upped her. Found this recipe- that used everything that I already had in my kitchen...and better than that I had marshmallow fluff to boot! I did what another user suggested and refrigerated the fluff overnight (2-7oz containers), sprayed the Kitchenaide bowl, used hook attachment, threw in fluff, I wasn't thinking and threw in whole 2 LB bag of powdered sugar instead of adding a bit at a time, not a problem with a lot of pulsing it pulled together nicely, removed from bowl, kneaded a bit, then rolled out! Might even sound worse than it actually was. Everyone loved the taste. I guess I would describe it kinda circus peanut like. Colored well and went on great! We will do this again and we will try on cookies. Also- with fluff we didn't add water and we omitted the vanilla- don't think we needed it. So pretty good for first attempt as we decorated cake pretty simply, will be more detailed and use some creativity next time. You cannot go wrong with this. believe me!

Breakfast Pies

400 seemed too high of a temp or 18-20 min was too long of a cook time( I set oven timer for 16 min...and still...). These kinda burned in my oven dunno why. I can see the potential in these. I will try em again. I made 24 of these using 1 log of "breakfast sausage", 5 XL eggs and a lil less than 1/4 milk. Next time I will use an additional egg or two, ended scooping about 2 tblsp of egg mixture over ea.

Peach Cobbler Dump Cake I

YUMMO! I make different variations of "dump cake" and it's always gooooood. I throw a stick of butter in the freezer a few minutes before I plan to use it. I cut the stick in half length wise then cut the halves in half- I then cut these up into thin pats. I think next time I will drain a bit of the syrup from the 2nd can as this was a bit to liquidy for me, thought the syrup would thicken up- but no... Easy Peasy

Roasted Vegetables

As a kick off to trying to eat better I thought I'd like to add more veggies to my diet. Never made roasted veggies. This was a great first attempt. I'm sure there's nothing to it but I'm glad I found this recipe. The smell was great even before going into the oven! I used a large butternut squash(never had before- only as creamed soup), tri-colored bell peppers, red potatoes, baby carrots and red onion. I would've used my sweet potato but was running out of room. I didn't have fresh rosemary and only dried thyme- so I just used 1 Tblsp italian seasoning(which contains morjoram, basil, thyme, oregano and rosemary). I will definitely make this again and again. Also I did use a little less than the called for 1/4 cup of oil. Per other reviews I used two pans, putting the squash and potatoes on one and everything else on pan #2, I took pan #2 out after 30 mins and pan one out after 50ish. My daughters and I picked at this all day will actually make along side something next time-as this was a test run. Yum!!!

Simple BBQ Ribs

I dunno how it happened but I completely forgot to save this recipe to my recipe box. I nearly panicked! But YAY :) all is well. These were delicious and simple. Tastes great with hot buttered rice- dunno why-just does! Hubby loved them first time around and will be even happier this time because I'm making enough for leftovers. Used sweet Baby Rays bbq sauce cause that's what we like. Yum

Easy Pumpkin Muffins

YAY!!! These are really good. They make the cutest mini muffins! I opted to use white cake mix- I had way too many boxes of that and I happened to have pumpkin pie spice- so I used just over a teaspoon of that instead of the other three spices. I used a small ice cream scooper to get these into my mini muffin compartments. This recipe makes 48 perfectly-ish. My boys 5&6 are gobbling them up as I speak. I am missing the oil a bit but this a nice step away from that. They bake up nicely(17 minutes in my oven). I think I'll dress em up a bit next time around- a drizzling of glaze or icing or a bit of streudeling...a pat or two of butter...A nice no fuss recipe, also great for when you want something sweet and have no eggs...

Coconut Sour Cream Cake

I couldn't wait to make this cake, It sounded too simple to be as great as it was being described... I hate to be the ONE person that didn't think this cake was "ALL THAT". Not that it wasn't a good cake because it was, I tried a slice on the first day, had a slice on the second day and I had a slice on third and fourth days and I can't say it was any better. Good cake? yes. Easy to make? Yes. Special cake? No. If I wanted something coconutty- I wouldn't overlook this recipe- but I don't see it as being my go to.

Brownies To Die For

Very easy to make- dare I say fool proof ??? These came out great for me, everyone in my house LOVED them. They had to be cut into smaller pieces than we normally cut our brownies into- because they are so rich and decadent. Made em in a 9x13, baked for 35 min, let them sit for some minutes, sprinkled 1 cupish of chocolate chips on top, let em sit for a few moments then smoothed them over the brownies and sprinkled with chopped pecans- pressed then into the chocolate a bit with my spreading tool. I will add this into my rotation of treats, kicks brownies up a notch.

Rasta Pasta

I LOVE LOVE LOVE this! I was at the store and saw some lovely colored peppers, I had no idea what I'd do with em but I bought em anyway. I got home plugged chicken and peppers into "ingredients" and up popped this gem. I liked how simple it was and that it was something else to do with chicken. Next time I'll just add the cooked pasta to the chicken concoction, we used rigatoni.
