Curried Coconut Chicken

I really liked this recipe...it has a subtle sweetness and I love the creaminess that the coconut milk creates. I tweeked a couple of things however...I did not use any sugar because coconut milk already has a subtle sweetness and I read some reviews that stated that this recipe was a bit too sweet...so I believe that omitting the sugar was a good move. The coconut milk I used is just labeled "Coconut milk" it does not state that it is sweetened or unsweetened...that was one thing I was confused about when I tried this recipe. Also...I read reviews saying that the sauce was a bit runny, so instead of using tomato sauce I used 4 oz of tomato paste..I think that the end result was perfect...just enough to make it saucy and slightly thick..great for pouring over white rice! I also added a little bit more curry for depth and a bit of extra garlic! The key with the garlic is to MASH it...not just merely chop it up. Doing this really brings out more of the garlic flavor. We served this recipe with garlic butter pita wedges to sop up the sauce...It was very comparable to my favorite dish at a local Indian restaurant and I believe the leftovers will taste even better tomorrow night. Also...a word about the curry smell...yes it lingers in the house for awhile...but I don't find it offensive, I actually like the fragrant aromas of the spices. :-) Good luck with this!

Grandmother's Buttermilk Cornbread

I made this last night as a side dish to some home made chili...It is deliciously sweet, moist, and rose to perfection. The key is following this recipe exactly..and not making substitutions. Put it in an 8x8 square pan if you like a nice thick piece of cornbread. It is wonderful slathered with butter. I cooked mine for the full 40 minutes. Be sure to grease the pan well with vegetable oil. *Note-I have found that milk and vinegar is just NO substitute for good ole buttermilk! Get some! Really! It is so versatile and can be used in many things.
