Soft Sugar Cookies IV

YUM! My whole family loved it. We didn't measure out the salt, just put a dash in, but that's only because I rarely cook with salt. We live at altitude and I didn't adjust anything in the recipe. Cookies were so easy to make, came out wonderfully soft, and were gone in no time! Thanks!!

Zucchini-Chocolate Chip Muffins

AMAZING!! I had to modify the recipe a bit just because I didn't have some of the ingredients on hand but I've made this 4 or 5 times now and every single time they are delicious and I get rave reviews! I omitted lemon juice, walnuts, and cinnamon but added oats and extra zucchini. I live at about 5500 ft above sea level so I make sure the dough is pretty sticky/moist then bake for 20 minutes. SO GOOD!!!

Fluffy Pancakes

Sorely disappointed. After thousands of rave reviews I was excited to try this for our Sunday morning recipe. I followed the recipe exactly and yielded some not-so-great "pancakes". The batter was extremely runny and reeked of vinegar. The "pancakes" were so flat that you needed to stack 2-3 to be the size of a normal pancake. The texture and flavor was mediocre but the fragility of the thin pancakes made it so the pancakes were soggy before the third bite. I have no idea what was different about my ingredients but I will stick with other recipes I've saved on AllRecipes. Sad to have wasted my morning.

Classic Waffles

This recipe worked really well! We followed instructions exactly and had light and crispy waffles that weren't too sweet or too bland. This recipe is a really good base for waffles with fruit or dessert toppings!

Caramel Sea Salt Dark Chocolate Coins

SOO good!! :) Can't wait for my morning coffee to see how wonderfully they complement that! I had a little trouble with the sugar crystalizing when I slowly poured in the cream. I kept the heat on low and eventually the sugar melted into the cream and began to boil. Also when I combined the caramel to the chocolate, it began to harden quickly so my "coins" were pretty rough. Glad I stuck it out though because the flavor is perfect! Just enough chocolate, caramel and salt. Can't wait to get better at this marvelously simple recipe!
