I'd never made soup before, and was surprised at how easy it was! My family and I all enjoyed it - I made it in July, but it would be perfect for fall or winter. It is rich and hearty and VERY filling, but so good! I paired it with homemade bread.
The only reason I give this recipe four stars instead of five is because of my minor substitutions - I used a largeish yam in place of the potatoes, and added a pinch of curry powder at the end. When I finished pureeing it was yummy but bland - plenty of S&P and curry powder fixed that! I really don't think it would have been the same without the yam though, so I would recommend using that instead of the potatoes.
