Greek Salad, The Best!

This is amazing dressing...makes me so hungry when I pack a Greek salad for my boyfriend's lunch that I usually end up eating one too. Its always been my favorite to eat out but now that I know how to make the dressing, we have it whenever we's the key to a really good salad. Makes the perfect amount too. I send one serving for lunch and the rest fills a salad dressing bottle for 3-4 more servings. We marinate all the goodies and then toss with the lettuce just before serving. Don't forget the pepperoncini! :-)

Healthy Coconut Oatmeal

Will definitely make this one but try it with coconut milk (unsweetened in the carton like regular milk). We make all of our oatmeal and most of our rice with, so yummy! Although I haven't tried it yet, I can taste it already so will give it four stars! :-)

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies were fabulous. I followed the recipe exactly and they turned out perfectly. Some reviewers don't appear to be aware that when melted butter is used, you should also use an electric mixer - this is how the dough becomes "light (literally) and creamy" and it also serves to cool it to the proper consistency. Large cookies should always appear to be underdone when they're removed from the oven if they are to be chewy when cool. Don't change a thing.

Cranberry Streusel Pie

This pie was wonderful...a terrific addition to our Thanksgiving menu. I followed the advice of other posters and added a large apple to make up the difference in volume since I also used a 12 oz bag of cranberries but I used a sweet apple so I didn't have to iincrease the sugar. I did also replace the shortening in the topping with butter. The pie was perfect as is but next time I'm going to try blueberries instead of apples just for fun.
