German Pork Chops and Sauerkraut

I was put on the spot to do something with the center cut loin pork chops for Sunday dinner. Found this recipe and hit the ball out of the park! I omitted the caraway seeds and no one noticed. Easy to make, and a delicious alternative to the usual pork chops on the plate in brown gravy.

Cheesy Baked Cauliflower

Another great addition to the not-so-usual dinner portfolio. This is an excellent side dish and easy to make. I did however tweak things a wee bit... but only in the presentation. I trimmed up a head of cauliflower, "steamed" it in the microwave wieht about a half cup of water, leaving the entire head intact to cook until it was just about "al dente". Then I continued with the above recipe but increased the amount of mayonnaise to 3 tablespoons and the prepared mustard to 2 teaspoons. Then folded in grated Parmesan (half cup). This mixture I spread over the par-cooked head of cauliflower then proceeded to bake as directed. The result was a nice golden brown presentation of cauliflower that we simply sliced to serve. Not the usual veggie side dish!

Blue Cranberry Sauce

This was on of this years Thanksgiving Dinner hits! Amazingly easy to make and you can serve it either warm (the way I like it) or chilled too.

Samoan Palusami

I left Samoa in 1997 and miss my island. In Arizona now and have discovered a market where I can get Taro, Taro leaves, and coconut milk AND NZ Corned Beef!! This recipe is what I needed only I substituted Taro leaves mixed with the spinach leaves and individually wrapped a dozen in aluminum foil. Mmmmm!!!

Sweet and Spicy Sweet Potatoes

Delightful change to the more traditional ways of serving sweet potatoes. The natural sweetness of the sweet potatoes contrasts nicely with the tang of paprika. The only minor change I made was to fry them like breakfast home-fries after they were done baking. But only long enough to give them a bit of that home-fry crunch. The entire family loved the dish. Easy recipe to add to ones portfolio of dinner time options.

Wilted Spinach Salad

Very good side dish. I decided to add a holiday element by using a generous handful of fresh cranberrys (cooked and reduced as if I was making sauce for Thanksgiving). I tossed this into the spinach until coated then proceeded with the recipe as directed. This added a slight sweet contrast with the bacon dressing.

Apricot Glazed Carrots

Wonderful to spring on the dinner table! Even those who snub carrots will enjoy this dish. And, easy to make. I par-cooked the carrots the night before so all I had to do on Thanksgiving was to "finish it up".

Octoberfest German Potato Salad

Delicious and a huge hit at dinner! I made it with the German style pork chops. I did tweek the recipe a wee bit however. I blended the vegetable oil with an equal portion of the bacon drippings. Also I added two hard boiled eggs sliced along with a full package of the very thinly sliced bacon (cut the bacon when it is parfrozen at a 90 to the strips in cuts about a half inch in width; cook the bacon, drain it and let it set up to a nice crunchy bite). Mix the bacon into the diced potato bowl and fold in the balance of the mixture. I would also suggest a pinch of ground yellow mustard. Let the whole salad chill for about an hour and serve as a cold side dish alongside the German Style pork chops. Mmmmm...

Pineapple Beets

Outstanding! Everyone had seconds... of beets!! I used fresh beets and substituted freshly squeezed orange juice for the lemon juice. Prepping and cooking the fresh beets adds some time to this wonderful recipe but it is well worth the effort! Pineapple and beet is a treat!
