Bubble 'n' Squeak
YUMMY! I didn't think my hubby would like it, but he LOVED it! We both did! We wanted it as a side dish so I left out the ham. Instead of bacon, I used a few bacon bits crisped up in a little canola oil. I also used light butter instead of regular. My skillet wasn't large enough so I couldn't flip it over, but it didn't matter. It was still good stuff! Tastes even better with a little Texas Pete hot sauce sprinkled on top. Will definitely make again and again!

Emily's Famous Hash Browns
Left out the onion and added salt and pepper to the mixture itself, in addition to a light sprinkling at the end. Also cut down the amount of oil. Only used enough to barely coat the bottom of the pan. The ONLY hash brown recipe I'll ever use!

Apple Strudel Muffins
AWESOME muffins! I took the advice of others I made a few changes. First, I shredded most of the apples. Next,I used half brown sugar and half white sugar, which I mixed in with the apples to bring out some of the juices. To this mixture I also added a couple heaping tablespoons of apple juice concentrate. Lastly, I added some cinnamon to the muffin batter. The results were delicious! I'm rating this recipe 4 stars because of the changes I made. However, they make this recipe is a keeper for sure!
