Fluffy Pancakes

One of the best recipes I have found using this website! I never make anything but these pancakes since I found it over a year ago. The only difference is I never use the vinegar to make sour milk, nor use buttermilk. Always just used regular milk and added 1tsp of vanilla to the mix. Comes out fantastic! I have often added blueberries, strawberries, or apples to with or without a bit of cinnamon. They are unbeatable!

Chinese Chicken Fried Rice II

Nothing beats real Chinese in my opinion, but this wasn't bad! I added a cup of mixed veggies to the stir fry for more crispness and flavor. Would of been even better a side of egg rolls!

Chicken Quesadillas

I love this recipe, although I tweak it to my own standards. For starters, I don't like fajita seasoning so I use a packet of taco seasoning and cook it as the package instructs with cooked chopped chicken. I also omit the bacon bits, as in my opinion has no place near Mexican dishes. I also don't bake them in the oven but instead serve them inside warm rolled tortillas like a chicken taco! I also add sour cream and salsa to them. Very good!

Janet's Rich Banana Bread

I made this for the last big family picnic and made a double batch. The first batch I made exactly as the recipe called for, the only difference being that I mashed the bananas before using them as other reviewers had suggested, and also added a tablespoon of lemon extract for more flavor. The second one I sort of came up with on my own for additives. I wanted something more heavy and spicy so I had some leftover blueberries and I added 1 cup of them to the mix. I also added 1tsp of nutmeg, 1/2 tsp of allspice, and 1 tablespoon cinnamon. The crowd loved it, and both were eaten quickly! It was split down the middle as to which one was best. I was very pleased. Just wish I would have gotten to eat a little more for myself!

Pizza Casserole

My mother used to make this all the time growing up and we loved it! The differences are I use Rotini noodles instead of egg noodles as egg noodles have to soft and soggy of a texture for my taste in this sort of recipe. I also add a half jar of spaghetti sauce, whatever flavor I feel at the time because it seemed too dry without it. I also omit the peppers because my hubby doesn't like them. And I add cheese to the casserole mix with all the other ingredients before baking it. Goes great with a side of garlic bread or toast!

Candied Chicken Breasts

I cut down on the amount of pineapple because it seemed to be a lot. I also took other viewers advice and didn't bread the chicken at all. I cooked it all in two separate skillets (didn't want to turn the oven on in the summer heat!) and served it over rice. It was excellent as always (made many times before) and a great way to get that Chinese food flavor without going out.

Zucchini Brownies

My husband hates zucchini and he loved these! He couldn't even tell that they had any in it he said. Great recipe, and a unique way to use up all those veggies my Dad keeps donating from his garden!

Mom's Zucchini Bread

First Zucchini Bread that I ever made, and it is great! I did a few alterations to the recipe though, based on personal preference. First, I put the Zucchini in the food processor because my husband freaks out when he gets a piece of a veggie bigger than a pea. It didn't harm the consistency of the batter/bread at all! Secondly, I omitted the nuts because yet again, the hubby doesn't care for them. Everything tastes great, and it is just as moist as they say! My only reason for not giving it 5 stars, is because I personally wish it would have been sweeter - but hey, that could just be preference as well. Other than that, wonderful recipe and gratz to me on my first Zucchini Bread!!!
