About this Cook
I am a (still) new wife, been married for 4 years. Only started cooking about 3 years ago, and I learn something new nearly everyday! I don't claim to be a great cook, although my husband tells me he loves my cooking! (Course that doesn't mean much because no offense but guh - his mother's cooking is HORRID!) But still, it is nice to hear the compliments. I would like to learn more about making things from scratch or 'homemade' items. Learning some more about baking would be nice, or how to incorporate more fresh veggies and fruits instead of using canned or frozen. Anywho, that's why I am here!
My favorite things to cook
I love Italian, and anything with a red sauce and flavorful cheeses! I would LOVE to learn how to make my own spaghetti sauce and meatballs. I am also having a small affair with my crock pot! (Lol) It's like the miracle food-maker. Nearly everything you put into it comes out fabulous and juicy! I'd like to get the same results when using my oven.
My favorite family cooking traditions
Substituting applesauce instead of oil while baking is something my Grandmother taught me. "Cuts down on fat." she used to say. She's right, and I STILL cannot notice a difference!
My cooking triumphs
I made (from scratch!) Christmas cookies for all the members of my family last year. It was quite the baking feat! I also discovered that I have a knack for grilling that I never knew I had. I need to actually buy a grill of my own though to explore that more. And I invented a few skillet recipies when I was forced to cook without an oven or a stove for six months. I call them 'Hamburger Helper' without the box! It's like homemade. It's wonderful! I have a few recipes like that that I came up with on my own.
My cooking tragedies
I have been known for years to be the "forgetful cook" and have a bad habit of leaving the oven on for hours when I am finished with it. Been working on that though. Haha! Also, I am not afraid to admit that in a rush twice, I left the cardboard on a boxed pizza while I baked it and completely ruined it. And I once grabbed sugar instead of salt and screwed up an entire batch of soup. Dropped an oven mitt into the oven once too...good times!

Yummy Lemon Coconut Loaf
I made this recipe exactly, only taking advice about measurement from a fellow reviewer about it being about 1.5 tbls equal parts lemon juice and lemon zest. It is amazingly moist and delicious! A good, strong lemon flavor just like I like, without anything artificial! I sent a picture of it to my husband at work and he can't wait to get home and try it. :)

Salsa Chicken Burrito Filling
My husband kept saying "wow" as he ate this! I felt quite proud after making this recipe! I didn't have any salsa on hand, so I used 8oz of tomato paste and chopped up 1/4ea of a red, yellow, and green pepper, as well as an onion instead. I also added 1/4 cup of water chicken bouillon and about 1tsp of cornstarch. I cooked it in the pan as directed (not in a crock pot as some people did) and used only a bit of salt, pepper, garlic salt, and a taco seasoning packet. Served them inside tortillas that I warmed on the stove in a non-stick skillet, and let them warm in the oven covered by a moist paper towel. They came out soft and almost steamed! Much better than the microwave tortillas. I also served it with white rice cooked with some chicken boullion, along with shredded cheese and sour cream.
