Chef John's Roasted Brussels Sprouts

Turkey Brine

I was only able to brine for about 8 hours due to so many things that got in the way of my holiday travel plans But those few hours were enough to make a difference. My boyfriend typically prefers dark meat but he enjoyed the white meat because it was the juiciest he had ever had. I used Poultry seasoning and savory, because buying the others separately was pricey. For the bag, I found a brining bag at Bed Bath and Beyond. I put the turkey in the bag, filled with liquid and sat it in a cooler with ice. I am anxious to try it again. Perhaps cutting down the amount for just a whole chicken :)

Blueberry Pancakes

this is the first time i make 1.pancakes from scratch and 2.blueberry pancakes and they came out delicious! I used Vanilla Yogurt because I thought it would lend more flavor and i prob used a little more Nutmeg & Cinnamon than specified because I was afraid of the No flavor some reported, and it turned out to be a good call. It took me 2 test pancakes before I got the griddle at the right temp, but once I got it they came out golden brown and fluffy. With any pancake batter I usually manipulate the griddle so that the batter spreads out a little and doesn't just clump up together. I dont know if thats what youre supposed to do but I always do it and I don't mind slightly mis-shapen pancakes for the sake of them coming out perfectly cooked. Definitly A Must Try! Oh and I used fresh blueberries, they were on sale at the supermarket :)

Tres Leches 'Three Milks'

Ok so the first time i made this cake was for christmas last yr and now every time i come into town to visit my family THEY DEMAND i make it! 1st time i made it came out perfect! however after making it numerous times after i have realized that it IS a little bit too sweet, so this time around i think i will try cutting down on the condensed milk as i think this is the problem. i always skip the meringue i always thought it would ruin it, opt for store bought cool whip or you can make ur own (as i do) by whipping up some heavy cream and some sugar. add some frozen strawberrys and VOILA! Your friends and family WILL LOVE IT! of course beware, becuz you might get stuck making it often, for them! :)

Baked Salmon II

absolutely fabulously easy to make! and its SO DELICIOUS! my husband has been beggin me to make it again! i swear this was so much more delicious than alot of the salmon i ve had in restaurants! am about to make it again tonite :) served with brown rice and cubed boiled potatoes

Tomato Curry Chicken

I dont know what i did wrong here, but this was not appetizing. I hated the smell it lingered in my kitchen for a few hours. I thought it was gonna be Good, since i read all the reviews, but will Never make again, sorry :(

Hamburger Vegetable Soup

the perfect soup for a winter day. i was surprised at how this soup tastes so much like a cambells chunky soup but BETTER. Me and Hubby LOVED it! served it and mins later, the whole little pot was Gone! made a few times already, highly recommend it. however, i do change the pasta alot. the first time, i used minute rice, small amount, just enough for it to be swimming around in every ladle but not enough to make it Thick. i like my soups brothy. and i do season the beef when i m browning it, garlic powder, pepper, dash of salt, steak seasoning. does the trick every time :P will keep on making this delicous soup

Slow-Cooker Pepper Steak

WE LOVE THIS MEAL! made it twice in two weeks already. first meal i ever made in a slow cooker (im a new wife), this was awesome! i seasoned the meat with garlic powder, pepper, a pinch of salt, and some steak seasoning. and i didnt have cornstarch so i added a little bit of flour instead, but made no difference in flavor. love it, will make again and again and again. serve it over white fluffy rice :)

Slow Cooker Chops

peppered the chops to our liking (lots of pepper! :P) and browned them on both sides, skipped the green beans, neither of us like em too much and just added more potatoes with a little more cream soup and water. came out nicely tender. believe it or not i had never really had pork chops (mother had worries about pork going bad in my little tummy when i was a kid) and this was just great, now i love em too. will make again!

Rita's Sweet Holiday Baked Ham

ham didnt pick up much of the flavor but i think that was my fault, i bought a smoked ham cuz thats the last one they had and i think that was the problem. BUt since the sauce was good, i just carved the ham and dipped the pieces in it before i served them on the plate. that worked out good. interesting concoction (im a rookie ) but it was delicious. hubby liked :P
