Cheddar Bay Biscuits

These taste very good, and were a real hit when my yeast failed and my bread didn't rise on Easter and I needed a quick fix. I only gave them 4 stars because they left my stomach feeling uncomfortable, I think probably because they ended up being pretty high fat with the cheese and melted butter. But if the fat doesn't phase you, they are definitely worth a try. I ended up making them with by accident with skim milkinstead of water, and it worked just fine.

Lentil Soup with Lemon

Best Lentil soup recipe I've ever had. Our grocery didn't have red lentils, so I took a chance and tried it with green lentils. It was still excellent!

Brie Cheese Appetizer

The 8 ounce wheel of Brie I found was too large for the largest sheets of puff pastry I could find (and I have a lot of nice groceries in a metro area). Since I was concerned about sealing multiple sheets of puff pastry without the cheese running out, I decided to try other reviewers suggestions of crescent roll dough. We loved the taste of the brie and apricot preserves, but weren't fond of the dough which seemed heavy for what was inside. Another time perhaps we'll try doing half wheels of brie since they might fit inside the puff pastry sheets.

Stuffed Pepper Soup I

I used this as the basis for a great soup the whole family loved. I incorporated many readers ideas, and was thrilled with the results. I used 2 lbs grass fed beef and browned it with 2 large onions and 4 cloves of garlic, then added 5 peppers (green, yellow, red), tomato sauce and diced tomatoes as it called for, 1 cup of water, 5 cups of beef broth, no added sugar/salt/pepper, 1 Tblsp worcestershire sauce, and 1 1/2 cups of uncooked brown rice. Took a little over an hour for the rice to be cooked, and it was heavenly. We will definitely make it again.

Marrakesh Vegetable Curry

This is an amazing vegetable curry. My entire family including teenagers adores it. Just the right blend of hot and sweet. Freezes very well. With all the chopping required, I triple it while I'm chopping and freeze it in family sized portions.

Roasted Brussels Sprouts

Not a fan. Haven't had brussel sprouts in years, but used to love them. With all the great reviews, I had high hopes, but the seemed a little dry and yet not quite done. Cooked them the 45 minutes, and they were relatively small for brussel sprouts.

Brown Sugar Meatloaf

Very good recipe. I followed other reviewers ideas and used only 1/4 c of brown sugar and some worcestershire sauce, and dry mustard. Only change I would make another time, is to cut back further on the brown sugar. It was very sweet.

Eggplant Parmesan

Very very good recipe. I'm not huge on eggplant, but I loved this. If you have more eggplant, or need more servings, I suggest just creating more layers. Worked very well for us. Only thing I changed was to salt the eggplant a little before the initial baking, and to create the extra layers.

Asian Cucumber Salad

Very good, and loved by our whole family (including 2 teens who aren't big on cucumbers). Still a great recipe if you happen to be lacking ginger and can't get it. Red pepper flakes work if you are lacking the chilis. I like to let it sit for half an hour in the fridge so the cucumbers really pick up the flavor.

Sugar Coated Pecans

These are to die for. Even my family that aren't big nut eaters adored these and devoured them. I followed some of the suggestions and added a 2nd egg white and an additional Tablespoon of water. Wasn't sure in the end if it was necessary. I did not use the ziplock bag method suggested by some; I did it just as the recipe called for. Worked great for me.

To Die For Blueberry Muffins

These muffins tasted great, but they were a mess all over the pan and to some degree the oven. Putting the crumbly topping on full muffin cups just dumped the stuff all over the pan. They also really stuck to the well-greased cups. Another time, I'll try them a little smaller. But again, the taste and texture was great.

Scalloped Corn

Good basic recipe, but nothing spectacular about it. Made it according to the recipe, minus the added sugar as many suggested. Used entire can of creamed corn - didn't drain as some were asking about. Used full fat sour cream, and a Jiffy corn muffin mix.

Quick Yeast Rolls

I made this recipe EXACTLY as written. The dough is indeed super sticky, but you are just mixing it with a spoon, so that's fine. These were super easy and they are the lightest yeast rolls I have ever made. They are heavenly! And, they were a huge hit with everyone who tried them. I will make these again and again.

Banana Banana Bread

Baked Apple Oatmeal

This recipe was VERY good. My kids love it. Straight out of the oven, it is very reminiscent of bread pudding. I emailed the recipe to a bunch of friends because nutritionally is has so many good ingredients. If you have leftovers, reheat in the microwave with additional milk, as leftovers are otherwise a little dry. I added extra apples I was trying to use up, and more cinnamon than was called for. I'll probably do that again.
