Spicy Vegan Potato Curry

Reviewed: Jan. 7, 2014
I like spicy dishes more than most (particularly Thai), and I significantly reduced the spices for my family, but it was still way to hot. The heat overpowered the garam masala, ginger, and coconut milk. I used one extra potato, and it was much saucier than what the photo shows. I think I may try it again, and use the same ingredients in VERY different amounts.

The Best Rolled Sugar Cookies

Reviewed: Dec. 7, 2013
Great recipe. I followed the suggestions of others and added 1 c of powdered sugar and 1 tsp of vanilla. Liked it very much that way.

Spiced Quinoa

Reviewed: Nov. 19, 2013
REALLY good! Just now moving to a plant-based diet, and this was a hit with me, my husband, and kids. I used red quinoa for what it is worth, and I needed a little more cooking time than what is here. Leftovers were even better than the original. I will probably play with different kinds of curry until I find my fav for this dish.

Whole Wheat Chocolate Banana Bread

Reviewed: Nov. 19, 2013
Just not a fan. I love banana bread, spiced breads, and chocolate. But this combo of banana, chocolate, and spices, just did NOT work for me. Rather than combining things I love, it was none of the things I loved when combined. Didn't taste, chocolate-y, banan-y, or spicy. Just an odd combo. I gave this two stars only because I liked the texture of the bread, and might use it as the basis for something else. Please note, I followed the recipe to a T.

Turkey Brine

Reviewed: Nov. 23, 2012
Great brine. I needed a little more, so I followed others suggestions and added some cider. I will make it exactly the same way again! I put a turkey bag in a bowl, poured in brine, placed the turkey in it, and tied the bag up. Then I placed the bag with the turkey in a cooler of ice and water and I left it about 24 hours. We rinsed it well, and then stuffed it and baked it. I will ALWAYS use this brine for turkeys.

Bleu Harvest Soup

Reviewed: Nov. 13, 2012
Soup seemed very thin. I added another acorn squash, and then chose to blend carrots, squash, and broth to give a little heartier soup. Still seemed thin. Another time I would add more. The flavors were very nice.

Sesame Broccoli Salad

Reviewed: Jun. 24, 2012
This was really good! Took it to a picnic since it didn't have anything that would quickly spoil in the heat. I accidentally use fire roasted sesame oil, which of course gave it a little more heat than was intended. But, it was an accident I will probably repeat.

Cheddar Bay Biscuits

Reviewed: Apr. 8, 2012
These taste very good, and were a real hit when my yeast failed and my bread didn't rise on Easter and I needed a quick fix. I only gave them 4 stars because they left my stomach feeling uncomfortable, I think probably because they ended up being pretty high fat with the cheese and melted butter. But if the fat doesn't phase you, they are definitely worth a try. I ended up making them with by accident with skim milkinstead of water, and it worked just fine.

Lentil Soup with Lemon

Reviewed: Feb. 21, 2012
Best Lentil soup recipe I've ever had. Our grocery didn't have red lentils, so I took a chance and tried it with green lentils. It was still excellent!

Brie Cheese Appetizer

Reviewed: Nov. 14, 2011
The 8 ounce wheel of Brie I found was too large for the largest sheets of puff pastry I could find (and I have a lot of nice groceries in a metro area). Since I was concerned about sealing multiple sheets of puff pastry without the cheese running out, I decided to try other reviewers suggestions of crescent roll dough. We loved the taste of the brie and apricot preserves, but weren't fond of the dough which seemed heavy for what was inside. Another time perhaps we'll try doing half wheels of brie since they might fit inside the puff pastry sheets.

Stuffed Pepper Soup I

Reviewed: Oct. 1, 2011
I used this as the basis for a great soup the whole family loved. I incorporated many readers ideas, and was thrilled with the results. I used 2 lbs grass fed beef and browned it with 2 large onions and 4 cloves of garlic, then added 5 peppers (green, yellow, red), tomato sauce and diced tomatoes as it called for, 1 cup of water, 5 cups of beef broth, no added sugar/salt/pepper, 1 Tblsp worcestershire sauce, and 1 1/2 cups of uncooked brown rice. Took a little over an hour for the rice to be cooked, and it was heavenly. We will definitely make it again.

Marrakesh Vegetable Curry

Reviewed: Dec. 21, 2010
This is an amazing vegetable curry. My entire family including teenagers adores it. Just the right blend of hot and sweet. Freezes very well. With all the chopping required, I triple it while I'm chopping and freeze it in family sized portions.

Roasted Brussels Sprouts

Reviewed: Oct. 22, 2010
Not a fan. Haven't had brussel sprouts in years, but used to love them. With all the great reviews, I had high hopes, but the seemed a little dry and yet not quite done. Cooked them the 45 minutes, and they were relatively small for brussel sprouts.

Brown Sugar Meatloaf

Reviewed: Jul. 28, 2010
Very good recipe. I followed other reviewers ideas and used only 1/4 c of brown sugar and some worcestershire sauce, and dry mustard. Only change I would make another time, is to cut back further on the brown sugar. It was very sweet.

Eggplant Parmesan

Reviewed: Jul. 26, 2010
Very very good recipe. I'm not huge on eggplant, but I loved this. If you have more eggplant, or need more servings, I suggest just creating more layers. Worked very well for us. Only thing I changed was to salt the eggplant a little before the initial baking, and to create the extra layers.

Asian Cucumber Salad

Reviewed: Jul. 26, 2010
Very good, and loved by our whole family (including 2 teens who aren't big on cucumbers). Still a great recipe if you happen to be lacking ginger and can't get it. Red pepper flakes work if you are lacking the chilis. I like to let it sit for half an hour in the fridge so the cucumbers really pick up the flavor.
