Cheesy Ham and Hash Brown Casserole

Whew, all I could taste in this was salt. My husband thought the flavor was good, so we differed on that. The biggest thing to try and alter is the consistency. It came out extremely soupy, did not firm up at all. Maybe next time I will only use one can of soup.

Almond Cupcake with Salted Caramel Buttercream Frosting

These were really good! Received many compliments. I doubled the amount of almond extract. I didn't think it was enough but others thought it was fine. Next time I will cut the frosting recipe to a third of what it is asking for. Had quite a bit left over.

Bread Machine Calzone

Loved this recipe for the ease and the variance of a pizza type meal. The bread seemed to overtake the filling flavor. Will try again but make two smaller/thinner calzones. Anxious to try Alfredo sauce with shrimp, crab,cheese, and onion.

Beef Tips

Made this for a bunch of guys who were doing outside work on my house. Cold, windy day and thought this might hit the spot. It was easy enough to make. I used Bragg's amino acid instead of soy sauce. Based on another review I added the brown gravy mix without the water. Still tasted pretty salty. I also used fresh mushrooms. It was good and the boys liked/appreciated it. Would really like to reduce the salty taste tho. (didn't add the suggested 1 t.) Will make again and continue to tweak.

Chef John's Perfect Mashed Potatoes

Flavor was ok. Was using hot turkey commercial sandwiches so didn't want to go crazy with too many flavor a. What I loved was the video instructing on the mashing. For years I used electric mixer. NEVER AGAIN! Turned out perfect. Can't wait to make again and flavor them up!

My Crab Cakes

This was SO good! I did not have any Old Bay Seasoning and the taste was still great. I did refrigerate after mixing and again after forming patties. I added one additional egg because I thought it looked a little dry and would help with holding together. Served with Garlic Aioli. I would definitely use the real crab meat and not attempt with the imitation. Can't wait to make again!

Shrimp Quesadillas

This was SO good!!! Made for a vegetarian friend but those who were suppose to eat ribs ended up raving about it. Only thing I did different was because I didn't have a jalapeƱo, I added a couple teaspoons of Frank's hot sauce. Can't wait to make again!

Creamy Mushroom Soup

Received great reviews after I served this. Flavor was perfect. I substituted vegetable broth due to serving to a friend that is vegetarian but that was the only change. Other than taking time to chop the mushrooms and shallots, quick, easy, and impressive.

Grilled Lamb with Brown Sugar Glaze

This glaze with grilled lamb medium rare was the perfect combination. Slightly sweet but not overbearing. Served with grilled vegetables made the perfect summer meal.
