Grandma Elaine's Unstuffed Sweet and Sour Cabbage

This is a recipe that I crave!! I've made it a few times. It's perfect for a cold winter day. I precook rice and add more than the recipe calls for. Or I might serve the dish over rice. Sometimes I form meatballs, other times I just saute the meat & keep it ground. The recipe is quite versatile to "play with" the structure. Keep the proportions of sweet & sour the same, that's what makes it so flavorful.

Extreme Chocolate Cake

Perfect!! I followed the recipe to a T and it was amazing! Used two round cake pans from the dollar store and still had excellent results. I sprayed the pans and then put parchment in the bottom layer & sprayed that too. No sticking or crumb issues. It was just perfect! Best chocolate cake I've ever made!

Tomato Soup

Followed exactly but skipped the worcestershire sauce as I don't like that flavor. It was quite good!! Used my stick blender at the end to puree but it still has a nice, thick texture.

Cranberry Upside-Down Coffee Cake

I used plain chobani greek yogurt (one whole 6oz container plus some more to make a cup. Only had walnuts & dried cranberries in the house and they were great in this recipe. I plumped the cranberries with boiling water before adding them. I will definitely make this again!

Banana Crumb Muffins

Love this recipe! Making it today for the second time. I'm adding it to my regular muffin rotation. The reviewers who suggested vanilla and spices to the batter was right on. Tonight I added some chopped walnuts to the topping because I had some leftover from Thanksgiving that I wanted to use up. I think they will work out well. Thanks for a fantastic muffin recipe!

Creamy Rice Pudding

I really liked this! I was trying to think of something to do with extra milk we had on hand. This was a winner! I followed the recipe as written but we had no raisins. Didn't miss them. Adding egg surprised me but it worked out. I was nervous with the cooking time so I let it simmer a little longer after the egg went in. So amazing warm right off the stove. Can't wait for more tonight when it chills.

Nana's Apple Crisp

Loved it! The topping was a great base for me. I added a sprinkle of ground ginger and some nutmeg to the cinnamon. Used wheat germ instead of oats. I only used the melted butter & didn't bother with the extra butter/cinnamon on top. Really delicious!

Black Bean and Salsa Soup

I followed it as written and it was a little too salty. I drained the beans, too. Next time I will add a 3rd can of beans and maybe cut the broth with some water. The salsa adds a lot of flavor.

Spicy South Of The Border Spinach Cheese Dip

I've made this recipe several times and brought it to a bunch of parties. Am about to make it again tonight for movie night. What I especially like is that the recipe is forgiving and it works well with modifications if you don't have all the ingredients on hand. For example, I only used the half & half once and usually substitute milk (only 1/2 cup) or nothing at all. We often have bags of shredded cheddar so I throw that in instead of jack cheese. And I've made it with varying amounts of cream cheese too. Rotel is a nice substitution as are diced tomatoes. This is a great recipe base and perfect for a party.

Cannoli Cake Roll

The cream was what I was after! I used a white cake mix to save time. Yes, it wasn't the best idea for a purist. But my daughter's birthday was in the middle of the week. It was really good and I'd make it again but try the cake part next time. Thanks!!

These were great muffins & super easy! Added a 1/2 tsp. vanilla. Followed everything else exactly. For some reason I only iused 1/2 the amount of streusel. I guess I need to start another batch!

Chocolate Frosting II

Way too sweet & I decreased the sugar to 2 1/2 cups. It felt like it was missing something...maybe heavy cream instead of milk. I don't know but I'll be looking for a new recipe next time.

Easy Morning Glory Muffins

These were good & I'll definitely make them again. I needed 6 carrots to make 2 cups & I used my cuisinart to shred the carrots & a granny smith apple. In place of the oil, I used 2 individual applesauce cups and the filled the rest of the 1 cup measure with oil (not that much). Omitted coconut as I didn't have any. My yield was 16 muffins. Baking time was about 25 minutes. Next time I might add a little more sugar-they were not that sweet.

Apple Breakfast Bread

This was great. I followed the recipe EXACTLY using 1 granny smith & i gala apple. The bread is a bit hard to slice because it's pretty crumbly. I think the reviewer who claims it's the butters fault may be on to something. But my family is enjoying it right now...even my daughter who hates baked goods was overwhelmed by the delicious smell and is devouring it.

Lemon Chicken Soup II

This was outstanding! I was looking for a variety on basic chicken soup. The lemon gives it a great zip! I took some reviewers advice & added celery. I pre-poached the chicken which worked well. I also used cooked brown rice made in the microwave with a PC rice cooker. Unbelievably good!!!

Granny Kat's Pumpkin Roll

I followed the directions to the T. The video helped quite a bit! I was worried about cracking/smooth rolling and didn't need to be. It rolled quite well. I used an 11 x 15 jelly roll pan & the batter didn't quite get to all the edges but it baked smoothly and beautifully. The center seemed set about 3 minutes before the timer went off so I took it out of the oven. Also, I used a recipe for pumpkin pie spice found on this site. It was 1 tsp. cinnamon, 1/8 tsp ginger, 1/8 tsp. cloves, 1/4 tsp. nutmeg. I am so excited to serve this at my party tonight!

Fudge Truffle Cheesecake

What a winner! This was easy & a huge crowd pleaser. It's very rich but some fresh whipped cream solved that problem, easy! Next time I make it (and there WILL be a next time!!) I will let it sit out for 20 minutes before slicing. I used a 10" springform pan because that's all I had and found that is was high enough. Other than the size of the pan I followed the recipe exactly. I crushed the vanilla wafers in the blender and that worked out fine. What a delicious & simple cheesecake!
