Tex Mex Black Bean Dip
My family loves this! I keep the black beans whole and use a can of diced tomatoes with green chilis (store brand rotel). Instead of picante sauce I substituted a 1/2 cup of salsa. Have used both canned and frozen corn with good results. Ingredients don't have to be exact-this is a very forgiving recipe. Perfect for a party or potluck!

Grilled Peanut Chicken
So, so, so good!!! I doubled the sauce and then sauteed the chicken with about half of it. I put the rest in a small saucepan and added more soy sauce and some water and then heated it to a thinner consistency. Served it with rice and broccoli. What a win!!
