Butter Beef

Believe it or not, I substituted chicken tenders for the beef. It was delicious served over egg noodles. I added a little garlic for more flavor. Very yummy! :)

Pasta Peas

I couldn't believe my eyes when I saw this recipe! I have been eating "pasta with the peas" since I was a little girl. I now make it for my own family, and it is a favorite in our house!! If you want it to taste even more scrumptious, add a teaspoon of sugar to the sauce. That's how us Sicilian's do it! And if you don't like the bits of onion, just use onion powder instead. It's just as delicious! Bon Appetite! :)

Kim's Chicken Alfredo

I made this tonight for my family, and we all really liked it. For those that said this dish is bland, you really need to put in all the spices that it calls for. I went heavy on the garlic, and I used the entire packet of onion soup mix (by accident). It didn't hurt the flavor at all (just gave us more sodium than we needed!)...oh well. I used cream/chicken soup instead of mushroom, just because we prefer it. I also threw in a couple dollops of sour cream and a splash of half & half, just because. This dish was VERY tasty, and I will make it again.

Favorite Peanut Butter Cookies

OK folks listen up. The search for the perfect peanut butter cookie ends here. So, it's 3:26 p.m. on Valentine's Day, and I am feeling extremely lame because I do NOT have a gift for my husband. I run to the computer, pull up allrecipes.com, and find this quick and easy recipe for his very favorite kind of cookie. I say to myself, why not? So I whip these cookies together in record time, and he is happily eating a delicious peanut butter cookie at 4:07 p.m! It doesn't get much better than that! Note - I cut the ingredients in half, just because I didn't want to make 54 cookies! I melted the butter, even though the recipe did not say to do so. I only baked them for 10 minutes, and they were perfect! I highly recommend them if you have to give a gift, and only have half-an-hour to come up with the perfect valentine! Enjoy!! :)

Linguine with Chicken and Sauteed Vegetables

I'm not sure about this dish. It wasn't bad, but it wasn't great either. It was just OK. I may try making it again, but this time I'll use a little less oil and cabbage (I think I used too much), and maybe a bit more of the other veggies, and more soy and lime. I'll have to keep playing with it until I get it to my liking, although I'm just not sure if it's worth the effort. My hubby and oldest son liked it. My 15 year old did not like it at all, and I just thought it was mediocre. Sorry!

Shrimp Scampi Bake

Well, this one's a keeper folks. It was simple to make, and delicious to eat! Do not use two sticks of butter. One stick is plenty!! Throw in a little white wine too. I sprinkled panko crumbs over the top before I baked. Served it tossed with angel hair pasta. Perfect!

Campbell's® Easy Chicken and Cheese Enchiladas

I followed the recipe exactly (except I used a different brand of salsa...didn't have any PACE). These enchiladas were FANTASTIC!!! They were simple to make, and delicious!! I will definitely make this dish again and again! Thank you!!!

Slow Cooker Chicken Stroganoff

This recipe was very easy to make and quite tasty. I'm not sure if I will make this too often, as it was a little too rich tasting. We like to eat a bit lighter, and this dish bogged you down a bit. But other than that, it really tasted good. :)

Best Ziti Ever

Yum! This was a great pasta dish, and very easy to make. I followed the recipe exactly, and it was excellent! It makes WAY more than 4 servings, so you can cut the recipe in half, and still easily serve four hungry people. Especially if you serve it with a salad and some garlic bread. I will making this one again and again! Thanks!! :)

Basil Chicken over Angel Hair

Wow, this dish was VERY tasty!! I will play around with it, only because I think it was a little heavy on the noodles (but I think I put in more than the recipe called for, so it was my bad). The taste was wonderful, but I might try using canned tomatoes instead of fresh, simply to make it a little less dry. Other than that, this dish really is quite delicious AS IS. I will make it again and again. P.S. I just remembered I used one tsp. of onion powder in place of the onion, just for a matter of preference. It was perfect!

Breakfast Pizza

I made this breakfast pizza today, and my family gobbled it up! The only place in the recipe where I strayed, was instead of using crescent rolls for the crust, I used pizza dough that I bought at a health food store. I followed the other reviews, and forced myself to use only 3 eggs (since I am notorious for using more than the recipe calls for), and I'm really glad I stuck to the recipe! 3 eggs was the perfect amount! Note: Make sure you give your pizza dough an "edge", since the eggs will run over the sides if they're not properly penned in! Buon appetite!! :)

Slow Cooker Lemon Garlic Chicken II

This was a good chicken dish, but it wasn't "bowl me over and knock me down" good. It was tasty, but a bit boring. I'm not sure I'll make it again. There are so many other slow cooker chicken recipes that I would make over this one. I think the best part is that I had everything on hand to make this, and it was very easy.

Szechwan Shrimp

This was very good. I took the advice of a few others, and I tripled the liquid/sauce mix. I'm glad I did, because it was necessary (this was the only reason I gave it 4 stars instead of 5). I also added a small amount of broccoli florets, baby carrots, and tofu just to give it a little more variety and color. The amount of red pepper flakes that the recipe called for is the perfect amount. I wouldn't change that a bit. It had just enough kick to be spicy, but not too much to be overwhelming. I will definitely make this again. :)

Glazed Chicken Wings

These chicken wings tasted good, but they were a little too messy/gooey for me, which is why I gave it a 4-star rating instead of 5. I just don't like to get that dirty when I'm eating finger foods. I will probably try making them again, but instead of cooking them in the sauce, I will bake the wings with seasoning, and then use the sauce as a "dipping" sauce. I think they would be less messy, and just as tasty. :)

Healthy Turkey Loaf

Extremely yummy and easy! I basically tripled the ingredients because I used one-and-a-half lb's. of ground turkey. I made a nice big meatloaf and fed a family of four, including 1 very hungry hubby, and 2 very hungry teenage boys. There was only 1 sliver leftover! I served it with the "Green Beans with Bread Crumbs" recipe listed on this website, and both dishes were a huge hit with the family!! Will absolutely make this healthy dinner again and again!! :)

Green Beans with Bread Crumbs

Can you say YUMMY? This recipe was simply delicious! Everyone in my house raved!! I used a bag of Trader Joe's french, thin, green beans, which in my opinion are better than "regular" green beans. After steaming them, I coated them with the olive oil first, and then tossed them with everything else! So easy to make, and yet it looked like a fancy dish in a nice restaurant! This would make a wonderful side dish for thanksgiving dinner, or to bring to a potluck.

Bowties and Broccoli

I made this last night and got rave reviews from my husband and two teenage boys. The only reason I rated it 4 stars instead of 5, is because I made a few changes to note. I cooked a few chicken tenderloins in olive oil in the skillet to give the meal a little something extra. I threw that in with the cooked, drained noodles, and then in the same skillet (added more olive oil), I sauteed the garlic and some pine nuts, and then tossed the steamed broccoli into it to combine the flavors. I then put all of that into the noodles/chicken, and seasoned it with basil, red pepper flakes, and salt and pepper. I tossed it with the romano cheese and served it. I doubled this recipe, and our family of four ate almost the whole thing! Very yummy!! Bon Appetite! :)
