Shrimp Burritos

I made these tonight and they were a big hit with the hubby and sons! I didn't have any cumin, so I substituted 1/2 tsp. chili powder + 1/4 tsp. smoky paprika. I think it worked, because it turned out delicious! I also forgot to buy plain yogurt so I just used sour cream. Tasted perfect! These burritos are a little bit of work, but well worth the effort!!

Chicken and Gnocchi Soup

This soup was very tasty! I used tortellini in place of the gnocchi, which turned out great. I ended up needing an extra can of chicken broth simply because the tortellini really soaked it up, but other than that, I stuck to the recipe. Will make again...but next time I'll try the sweet potato gnocchi.

BBQ Pork for Sandwiches

100% simple, delicious, and inexpensive!! What's not to love??? My whole family devoured these sandwiches!! Served them on whole wheat buns with pickles, and a side of slaw! Yum Yum!!! :)

Italian Kale

I've never made Kale, so this was a first try for me. I have to say, I really liked it! Not sure if my family felt the same way, but I think if I doctor it up with a little more flavor, they may come around to liking it. I ate kale quite often as a child, and I'm pretty sure my grandma used a LOT more garlic, and probably a dash of sugar, so I'm going to try that next time. (Coming from a family that is 100% Sicilian, I'm pretty sure my grandma put sugar in EVERYTHING!) :) I served my kale as a side dish with Pesto Cream Sauce Linguini, also found on this site. It was a nice combo! I will definitely be making both dishes again!

Pesto Cream Sauce

This dish was excellent! The only two small changes I made was to cut the amount of butter in half (I used unsalted), and I only used 1/4 cup Romano cheese (instead of 1-and-a-half cups) and substituted a cup of low-fat mozzarella for the remaining cheese. The rest of the recipe I followed as it was written and it was delicious! Using less butter (w/no salt) in no way compromised the flavor, so I recommend this, to keep down the calorie and sodium count. I served this with a side of Italian Kale, also found on this site. It was a wonderful meal that I will be making again!!

Braised Pork Ragu

Made this tonight...FABULOUS!!!! The only one small change I made was...I used a 14 oz. can of fire-roasted chopped tomatoes, instead of a 28 oz. can of plain chopped tomatoes. It was perfect! Served it over egg noodles with Parm Cheese. The whole family loved...will make this again and again!!!

Chicken Pot Pie IX

This is THE best Pot Pie I've ever made. I'm throwing away all my other Pot Pie recipe's, 'cause this one's the keeper! I only strayed a little bit from the original recipe...I used a whole wheat pie crust, and I substituted cooked, cubed sweet potato in place of the celery. Also added a teaspoon of garlic pepper to add a little zip. I doubled the saucy part, as per other reviewers suggestion, and cooked it for 45 minutes at 375. I will make this again and again!! :)

Pasta Primavera with Italian Turkey Sausage

Very healthy and tasty dish. I used whole wheat penne pasta, less oil, and only 1/4 tsp. of bullion to keep it even healthier. I also used a can of roasted tomatoes instead of plum, and i only used two tsp. of fresh basil. The whole family liked. Will make again for sure.

Broiled Tilapia Parmesan

In the summertime, we like to BBQ salmon, but other than that, I really don't know how to cook fish! So, in trying to incorporate fish into our diets for good health, I decided to buy Tilapia. I had no idea how to prepare it, so I looked for the easiest and best-reviewed recipe I could find. And here it was! This Broiled Tilapia Permesan was absolutely DEE-LISH!! I sprinkled a little bit of garlic pepper on the fish before cooking, and it was heavenly. In the creamy topping, I used low-fat sour cream in place of the mayo, and about half the Parmesan cheese. Excellent Tilapia, and it couldn't have been easier to prepare! Served it with fresh-steamed broccoli and whole wheat cous-cous. This one's a keeper!! :)

Toscana Soup

The store was out of kale, so I just used spinach. I used low-sodium chicken broth for all the liquid (instead of broth and water) and I also used evaporated milk instead of heavy cream, to keep it healthier. Absolutely deelish!!

French Toast Casserole

I made it EXACTLY as written. It was just a little bit dry, but the flavor was yummy. Not sure if I will make again. It was good, but not great. I think I'd rather have real french toast.

Potato Skillet

I used 4 potatoes and sliced them very thin (more like shavings). I also used 8 eggs to make it more "eggy." The spices called for were perfect, and added a wonderful flavor to the dish. I even sprinkled a bit more of all three spices over the whole dish once it was cooked. Delicious! Will make again for sure!!

Easy Chicken Enchiladas

This recipe makes a LOT of food. I cut down on the cheese and the sour cream, and I still had enough filling for 8 very large enchiladas. We could only eat one each! I had to cook them a little longer (about 35 to 40 minutes) to be nice and hot. Very good recipe...will make again.

Ground Beef Shepherd's Pie

This dish was really good, but I'm giving it 4 stars instead of 5 simply because I changed a few things. I used 2 cups mixed vegetables in place of the tomatoes and green beans. I spruced it up with a little garlic pepper, and I added a dollop of sour cream and a teaspoon of horseradish mayo to the potatoes. Very yum!

My Meatloaf

Very yummy meatloaf, and so easy to make. I doubled the recipe (using 1 lb lean ground hamburger and 1 lb ground turkey) and used 1 cup of seasoned bread crumbs in place of the bread. Cooked in a loaf pan at 350 for 1 hour and 15 minutes. Perfect! :)

Easter Breakfast Casserole

I made this for a crowd, and everyone LOVED it and wanted the recipe! To make it even easier, I used the precooked bacon from Costco. Simply microwave for 1 minute on a paper towel, and the bacon is ready! I also made one of the casserole's with cooked, crumbled Italian sausage. Excellent!! Will make again and again!!

Italian Tortellini Soup

Very delicious and healthy. omitted the tomatoes and only used one zucchini. Doubled the broth for lots of yummy soup, and threw in some cooked, crumbled Italian sausage for more flavor. A keeper!

Potato and Bacon Salad

This was the first time I had ever made home-made potato salad. It was good, but not great. I'm not sure what it was lacking, but it definitely needed more flavor. I'll try again, and throw in a few more spices. I'm sure it can be a five-star salad by the end of summer. :)

Seafood Fettuccine

This dish was quite good! I didn't have any green onions, so I just cut up a small tomato to put in it's place to add some color and flavor. In place of the shrimp, I used leftover grilled salmon. It was delicious!! You can substitute any veggies or fish, and this will still taste great. Will use this recipe again, for sure!!
