Hasenpfeffer (Rabbit Stew)

I've made this several times and love it! I don't use ever use bouillon in anything though. it's sacrilege. Replace the cup of water and the bouillon with stock instead! This is especially good for wild rabbits which really need to be stewed. I do this recipe with cottontails, and I do it in a dutch oven. I put it in the oven for 2 full hours at 350.

Chef John's Braised Lamb Shanks

My son liked this so much I made it twice in one week. This was the first recipe that I tried in my new dutch oven - it's one of those ceramic coated cast iron deals - and it was perfect for this recipe. I did not alter this recipe. Be sure to use BOTH the chipotle AND ancho chili powders. The cinnamon is what takes this to Africa and makes it a real gem of a dish.

Japanese Ginger Salad Dressing

The ingredient list is spot on, but not the quantities. So experiment until you get those right for your own taste. For me, it turned out to be 1:1 oil to fresh squeezed lemon juice. Next time I will try adding grated carrot and/or sesame oil. But this combination of ingredients was spectacular. I would have given it 5 stars if the quantities had been better to my liking.

Herb and Beer Braised Rabbit

This is my favorite dinner recipe of all time! I've made it so many times I've lost count. I often get up early on Saturday to get to the farmer's market for a rabbit before they sell out - just so I can make this! Use wild mushrooms if you can. I especially like shiitakes with this. Fresh herbs are NOT optional! And the beer I use is Shiner Bock.

Beef Stroganoff III

I followed all of BEEZLYS recommendations and in addition I did NOT use canned mushrooms. I sauteed baby bellas in a cast iron skillet and stirred them in at the last second. Best stroganoff ever. But really the 5 stars belongs to BEEZLYS!
