This was a great recipe to start with. I took the advice of another reviewer and baked the boats while preparing the stuffing (about 15 minutes), and I substituted chicken for the pork sausage, which I had cut into small pieces and only cooked so the outsides were white before adding to the mix. The zucchini boats ended up slightly crunchy beneath everything else, and the whole dish was outstanding. My wife was amazed. Thanks.
