Don't use your family or friends as guinea pigs... they will love you more for it -:¦:- -:¦:- The recipes compiled in this book will work well with any main ingredient. For example, Shrimp De Jonghe, will work just as well with Calamari - Scallops - Clams if you prefer... so never be afraid to try it with a new twist - your "OWN" twist -:¦:-
My favorite things to cook
Seafood is my passion... so shellfish and rice like Paella usually ranks No# 1. Still trying to master Deli-Style Corned Beef and Brisket of Beef... yummmmmm
My favorite family cooking traditions
With an Italian/Spanish heritage we ate alot of rice and macaroni. But come the holidays we would prepare for days with homemade dough (spinach pies) and Pasteles (hispanic style empanadas made with a plantain/yucca base filled with stewed pork then wrapped in parchment and later boiled to cook. You unwrap these babies and WOW very orgasmic!!! Of course, sucking pig and rice, plaintains, and avocado salad is par for the course. Italian side dictates the "Seven Fish of The Sea" on the eve since we don't do meat the day before Xmas. We're talking fried calamari, scungilli salad, baked clams... and tons of Zepoli's dusted with powdered sugar... are you hungry yet? We make a Cocoanut/Rum concoction called "Coquito" and "pitorro" which can only be described as homemade rum moonshine haha... and tons of both Rice & Bread Pudding & Torrone.
My cooking triumphs
Chicken Cordon Bleu with lemon butter cream sauce. A homemade cookbook that everyone wants a copy of is a proud accomplishment as well. And do try my recipe for Paella... I think its foolproof and delicious.
My cooking tragedies
Recently tried to make Escargot but snails are no longer allowed and I can't say I approve of the canned version with packaged Shells.
