Chickpea Curry

I am not a huge fan of Indian food, and I’ve certainly never attempted to make curry on my own, but this stuff is delish! I used only one can of drained chickpeas, and added one big red potatoe (cubed), 2 big sliced carrots, half a green pepper plus one can of broth. As suggested, I mashed up some of the chick peas and halved the pepper. This is easy to make, tasty, cheap and not bad for you... What else can you ask for. Plus considering that many reviewer has adapted this recipe to suit their personal tastes, it’s also flexible. OH... I didn’t have any cumin! Will definitely make again. My husband will never eat, but it’s perfect for me for lunch! THANKS for sharing.

Banana Cake X

This was pretty good, but not my favorite. A lot of reviewers said 3 bananas, and for me, 3 made it too mooshy. I think if I were to make again, I’d use 2, but just make sure they were super over-ripe. I would also maybe add a bit of baking powder, as this was rather flat and ugly looking. And maybe use unsalted butter. Normally, I am a salt fiend, and I like to use salted butter when baking, because I like the sweet/salty combo, but this tasted like salty bananas, a little. Anyway... I’m going to give the full on homemade banana cake a try, and see if it’s worth the effort.

Artichoke Spinach Lasagna

I didn't like this too much, even with the suggestions (less broth, add ricotta). I think the main thing I didn't care for was the taste of the marinated artichokes... much too vinegary for me. Won't bother with this one again.

Baked Scallops

The best!!! Easy, quick, and most importantly, my husband couldn't keep from shoveling it in!! I added 5 minutes of broiling time at the end to crisp it. Also used Progresso bread crumbs. Can't wait to make this for company and impress my friends!!!

Easy Peach Cobbler

Pretty good for easy prep... but not my favorite cobbler. A little too sweet, more like a peach cheese danish, and not a good one at that. NOt bad, but not good enough to make again. Also very unattractive!! NOt good for guests. Took much longer than recommended time.

Best Marinara Sauce Yet

To say this is the best red sauce ever is just plain silly. BUT it is good. BUT not better, or certainly easier, than the better jarred brands.

Basic Ham and Bean Soup

I made a lot of changes... used a big thing of chicken broth instead of water, and 1.5 big cans of canned white beans. Sauteed 4 cloves of garlic with more celery (with leaves!!) and carrots and the onion, 2 ham hocks, then added 1/2 can of tomato paste (cause that's what grama did!!) the broth and beans.Totally delish!!!

Extreme Banana Nut Bread 'EBNB'

This is not the best BNB I have every made, but it's pretty good -- and it managed to win me second prize at our company bake sale today -- so thanks!! NOTE -- took longer than 70 minutes to cook!! I could barely keep my eyes open waiting for it to bake.

Shepherd's Pie VI

First day was just ok... WAY better the second day as left over.Recipe as is required liberally spicing up to meet my tastes. OK, but I don't see myself making this again... something in the meat mixture was lacking,

Creamed Spinach II

I'm not a huge spinach fan, but am making an effort to eat more of it, so this was a nice option. I used 1 10 oz. packages of fresh spinach, and low fat soup... added in a couple cloves of garlic, and pepper. Baked in the oven for 15 minutes with a little bread crumbs and parm on top. Easy to make!

Cousin David's Slow Cooker Brisket

Tastes just like the brisket my mom made when I was growing up. I used the "homemade" chile sauce (ketchup, etc) and lined the crockpot with onions. Very delicious!!! A little on the sweet side, but that's how i like it! I used a 1.5 lb flat cut brisket, and it took about 5 hours on low.

Cabbage Beef Soup

This was pretty good... but i was hoping for something more like stuffed cabbage without all the work... maybe next time I will add in cooked rice at the end instead of the beans? It was also pretty salty.

Chicken and Spinach Alfredo Lasagna

This was good, but not great. I followed the recipe pretty much to a tee, with the exception of using fat free half and half instead of heavy cream. I don't think the recipe suffered because of it... just needs a little extra spice or something flavorful. I found it a bit bland, but my husband loved it. Go figure!!

Lentil Soup

This is THE BEST lentil soup recipe I have found. The only thing i did different was use a big can of chicken broth instead of the water... it was a little less than the liquid called for, but I like a thicker soup, so it was perfect for me. FABULOUS!!! Thanks for sharing.

Honey Ribs

Although this was very well received at fight-night party dinner, I did not care for the sauce at all. Too sweet, not tangy or spicy/salty/peppery enough for me. I won't make it again... although I WILL try for another rib recipe in the crockpot... they were falling off the bone. I also broiled for 15 minutes and drained the grease, so the ribs were not greasy.

Original Homemade Italian Beef

Ok, this was tasty, and easy, and we really liked it. BUT... and this is a biggie...does NOT taste like Italian beef, maybe a 5 out of 10 on the Italian beef scale. Tasty... but i'll keep searching. I've consulted my husbands mom (she lives chicago area) and i'm going to experiment with her recipe... maybe i will post if i can get it right!!!

Hummus III

ohmygoodness! So yummy! I couldn't find tahini, so I subbed about 1.5 tsp of sesame seeds. Also cut back on the lemon juice, and did need the reserved liquid from the beans... I just used one can of beans as it was almost 2 cups (not quite). Quite delicious.

Creamy Macaroni and Cheese

This was indeed a quick and easy recipe... and it made for very creamy mac & cheese. As usual for me, i added my own touches, replacing a portion of the liquid with half a can of cream of mushroom soup and adding garlic/onion powder liberally. The end result was too bland for me... so i will continue my search for mac & cheese with a kick!

Au Gratin Potatoes II

I took some significant liberties with this recipe, and the result was AWESOME! I used Simply Potatoes brand refrigerated potatoes... needed more than one bag, so buy 2. I also used gruyere cheese, as I'm not a big cheddar fan. Added about 1/4 extra cup of pecorino/romano, a clove of pressed garlic, and salt and pepper and onion powder. Topped with canned fried onions and bacon bits. Cooked in a big 9 x 13 pan, because we like the well done parts best. RAVES ALL AROUND!!!

Dog Biscuits II

Two enthusiastic paws up! My dog eats a home-prepared diet, and he loved these! I omitted the salt, added some fresh garlic, and a sprinkly of parmesan at the end!! Easy to make, (easier when dough is chilled a bit,at least for me) and will be great gifts for all my dog loving friends. Thanks for sharing
