Brisket with BBQ Sauce

WOW!!!! So easy, so delicious. Followed direx exactly. Only difference is that I added a clove of garlic to the sauce. I also put a little beer and beef broth in the pan after the first 2 hours. I made two 2.5 pound briskets, put them in a pan, and covered tightly with foil. About three hours total.

Mom's Favorite Baked Mac and Cheese

WOW!! Full disclaimer, I don't really even like mac n cheese, but my hubby wanted something for football night with the boys, so I made this. HOLY WOW. Only thing I changed was to switch out the American for an Italian blend. And I added one clove of garlic. YUM!!! Would be sooooooo good with a little chives and bacon on top. Pretty easy to make, also. THANks!

Broccoli Noodles and Cheese Casserole

As written, this would be pretty bad. But, w/some mods, it's a solid 4 stars. Here's what i did: 1/2 cottage cheese, 1 can cream of mushroom, several shakes of worcestshire, one clove of garlic, and about a 1/4 cup of parm cheese. I also halved the amount of noodles and used only a handful of cheddar. Mucccchhhhh better!

Slow Cooker Chicken and Dumplings

I give this 3 stars because, as written, it's more of a base than a complete recipe. I added carrots, celery and some garlic, and seasoned the chicken w onion powder, garlic salt and pepper. Cooked on stove top and it was ready in about 90 minutes. As written I think it would be very bland.

Big Ed's Cajun Shrimp Soup

I think this recipe is a great base, but lacking as written. Where are the veggies? I added a bunch of okra and corn, and that filled it out niceley. I also did 1/2 chicken broth and 1/2 v8. Will make again with my mods. THANKS

Oven Pot Roast

Sausage and Peppers for a Dozen

I'm giving this 5 stars WITH some modifications. No need to slice the sausage, save time and leave it whole. I did flip half way thru so it would get brown on both sides. I also drained and blotted up all the grease. I skipped the sauce and added pepper, garlic salt and onion powder. Next time I will add the veggies a little later. They became too soft and melted down to almost nothing. Overall a biG time saver when feeding a crowd.

Kathy's Delicious Whole Slow Cooker Chicken

ugh. Texture of the chicken was mealy (def. cooking times were off for my crockpot) and taste was bland. On the plus side, the dog was happy! Will not make this again.

Easy Polenta with Tomato Sauce

Delicious! Soooooo easy!! I used 1.5 cups of each liquid, which gave a firmer texture. Served with chicken and sauted onions, but for me, I prefer minus the meat. Topped with Famiglia del Grosso sauce ... THE BEST!

Roasted Brussels Sprouts

Tasty! I cut the sprouts in half and cooked at 400 for 20 minutes. I did not remove the core, that would be way too time consuming. Not bitter at all. Next time I plan to add quartered onions. I would like to add some garlic, but worry that it would burn at 400?

Roasted Garlic Cauliflower

Tasty! We were pressed for time so I microwaved, then tossed with oil, garlic and parm, and popped in the over to broil/brown. I trimmed the oil & cheese by about half and I don't think it suffered.

Turkey in a Bag

Wow!! Hands down best, most moist and tasty turkey ever!! I coated the turkey under and outside the skin with a paste of butter, garlic salt, onion powder and pepper, then put it in the bag with celery and onion. A 14 pound turkey done in just over 2 hours. AMAZING!

Bread and Celery Stuffing

This is my old standby, pretty much what I grew up on. I like to add some garlic, a little bit of diced mushroom, an egg and LOTS of celery leaves. PERFECT!

Lemon Cream Cupcakes

I followed the recipe fairly closely, but based on reviews, I did add some lemon extract and also some agave nectar (because i like cupcakes sweeeeeeet!) Very good flavor but the texture was crumbly :-((((

Quick and Almost-Professional Buttercream Icing

Wow this is super yummy, and as advertised, VERY easy to make. I followed direx exactly and the texture was perfect for frosting. Very, very buttery, actually more so than I prefer. It reminds me a lot of the icing at Whole Foods. I am going to experiment with 1/2 crisco next time.

Magic Mango Bread

This was a tasty disaster. Full disclosure: i didn't have enough mangos and had to add a banana.Other thing I did different was to use coconut oil instead of regular oil. Also added a little bit of baking powder. Anyway, end result was tasty but crumbly and stuck to the bottom of the pan. It was good, but not great, and since it was a mess I don't think I'll make this again.

Easy Meatloaf

4 out of 5 for 2 reasons: too much milk and not enough flavor. However with the easy additions of a little celery, some green pepper and garlic, a little less milk, this was easy and delish. And the topping was YUMMMMOOO! Totally seals the deal. Hubby ate till he had a bellyache!

Shrimp and Okra Gumbo

I give this 5 stars because my fave recipes are the one s that lend themselves to customization. Here are my mods: Instead of tomato I used one can of tomatoes w/peppers/onion/celery. I used about 4 tblsp. tomato paste. 7 cups of water, to which i added better than bullion chicken (according to direx) I also used red pepper instead of green, and I used tons of celery leaves. OH and some shakes of Texas Pete hot sauce. And bay leaves. Let sit overnight in frig, added shrimp to boiling gumbo for 10 minutes. DATS GOOOOOOD!

Gourmet Mushroom Risotto

Taste was pretty good, but I could not get the texture right. It came out more gloppy (a la congealing oatmeal) than creamy :-( This despite following the instructions carefully. No way was this done at the 20 minute mark... rice was still crunchy.
