Peanut Butter Chocolate Chip Zucchini Muffins

I needed to use up some extra zucchini and this was the perfect choice. I used a little less sugar and cocoa powder and a bit more garam masala and they were a huge hit at work.

Luxury Loaf

Normally the first time I try a recipe I following it exactly, but I just couldn't justify so much butter in a single loaf. I used 4T butter and 1/4c lite salad dressing, 3/4c sugar, and 1/2c egg substitute with 1/2c mini semi-chips. It had rich orange -bittersweet choc flavor and dense moist texture. In fact my boyfriend insisted I leave it here for him instead of bringing in to share at work

Tropical Sweet Potato Fries

I cut the raw potatos into fries, tossed with oil and spices and roasted for 25 min at 450 and served with a cinnamon yogurt sauce for dipping. Wow! One of the best recipes I've tried all year

Decadent Pumpkin Muffins

These are the best pumpkin muffins I've ever made. I cut it back to make 12 and skipped the raisins and water. They were rubbery and stuck to the papers the first day, but the next day they were amazing! Rich and moist and perfectly spiced.

Spicy Orange Chicken

We really enjoyed the spicy orange flavor this dish promised. I did leave out the ginger and cilantro (just personal perference) and to cut calories I left the meat whole and served the veggies on the side without the rice.

Devil's Steak Sauce

I also used ketchup instead of tomato sauce becuse that's what I had so I backed off the sugar a bit. After tasting this sauce plain I was far from impressed, but I went ahead and used it as a glaze for some salmon fillets I was broiling and after the first bite my boyfriend and I were raving about how perfect it was.

Whole Wheat Sweet Potato Muffins

After baking an 8oz sweet potato I ended up with 1 cup mashed. We don't like wheat flour so I just used white and reduced honey to 3/4, subbed applesauce for oil and plain nonfat yogurt for vanilla and skipped the topping all together. These completely wow'd my boyfriend and basically vanished when I brought them to work

Spicy Cajun Cabbage

I loved the way these flavors sounded but I was looking for a cold side, so I mixed all the spices with a mayo/sour cream combo added a bit of sugar and vinegar and the result totally wow'd my BF and myself. Super yummy cajun flavors! Great with BBQ chicken

Creamy Artichoke Pasta

I used canned artichokes hearts with fat-free italian dressing and 1 cup of fat-free cottage cheese which I pureed. I added a bit of lemon-pepper and a handful of fresh chopped basil and left out the oil and butter. I also scaled it back to make 4 side dishes and it was perfect with BBQ chicken.

The Best Potato Salad

I used this dressing for a combination potato and broccoli salad. I replaced half the mayo with fat free sour cream and we just loved it. Great balance of creamy, sweet, and tangy.

Chipotle Pineapple Ham

This is not your typical topical pineapple sauce, but rather a spicy, sweet, smokey treat. I didn't seed the chipolte peppers because we like really spicy and I reduced the suger by 1/4, threw it all in the blender, thickened it on the stove, then poured over chicken breasts and baked at 375 for 30 min. Instant success! YUMMY!

Warm Green Bean and Potato Salad with Goat Cheese

This was a hit from the first bite. I used fresh green beans and subbed feta for goat cheese because it had it on hand. We enjoyed this warm the first night and cold the second and it was great both ways

Chicken Tequila Fettuccini

This was an instant hit at my house. I like bold flavor so I doubled the jalapeno, tequilla, and lime juice, plus tossed in the lime zest just before serving. So Yummy!

Thai Noodle Salad

The peanut butter/ tahini combo with the chili sauce really makes this dish. I used imitation crab due to allergies, thai rice noodles instead of pasta, and added a healthy dose of siracha becuase we like things spicy.

Ibby's Pumpkin Mushroom Stuffing

A new family favorite! I used pumpkin bread with apples and morel mushrooms although I did leave out the celery. Perfect combination of sweet and savory, creamy and crisp.

Wow! super moist and nicely spiced and the cream cheese ribbon is just fun. I didn't have much hope for this when it came out of the oven so flat, but maybe just needed a smaller pan because the taste was fabulous
