Pumpkin Corn Bread

I tried this out for our thanksgiving dinner and after my boyfriend confessed he didn't like cornbread he raved about these muffins! They were rich and earthy, very moist and just a bit sweet. Perfect!

Spicy Glazed Carrots

I tossed sliced carrots with oil and dry spices and roasted them at 400 for 40 mins then tossed with a bit of sweetener and garlic salt before serving. My boyfriend was very uncertain about the cinnamon carrots but they were amazing with our bbq chicken.

Cowboy Mashed Potatoes

This recipe reminds me of my childhood when I mixed whatever was on my plate into my potatoes. I used equal parts carrots and potatoes, doubled the jalapeno, and omitted the butter and cheese to reduce calories.

Luxury Loaf

Normally the first time I try a recipe I following it exactly, but I just couldn't justify so much butter in a single loaf. I used 4T butter and 1/4c lite salad dressing, 3/4c sugar, and 1/2c egg substitute with 1/2c mini semi-chips. It had rich orange -bittersweet choc flavor and dense moist texture. In fact my boyfriend insisted I leave it here for him instead of bringing in to share at work

Whole Wheat Sweet Potato Muffins

After baking an 8oz sweet potato I ended up with 1 cup mashed. We don't like wheat flour so I just used white and reduced honey to 3/4, subbed applesauce for oil and plain nonfat yogurt for vanilla and skipped the topping all together. These completely wow'd my boyfriend and basically vanished when I brought them to work

The Best Potato Salad

I used this dressing for a combination potato and broccoli salad. I replaced half the mayo with fat free sour cream and we just loved it. Great balance of creamy, sweet, and tangy.

Caramel Macchiato Banana Bread

Awesome flavor combo! I made a few changes to fit our lifestyle and ingrediants I had on hand. I subbed applesauce for half the butter, disolved the coffee in 1/4c of water, and stirred 2T of powdered caramel vanilla creamer into the flour mix.

Sweet and Sour Zucchini Salad

This is my go to recipe when zucchini is in season, but after adopting a healthier lifestyle I made a few switches to reduce the fat and calories. I used 1/2c of fat-free Italian dressing instead of the oil, cider vinegar, salt and pepper. Replaced the sugar with no calorie sweetener and used a whole red bell pepper. It was a hit.

Grilled Chipotle Marinated Chicken

Finger Lickin' Onion Dip

I reduced the sour cream to 1 cup and added 1/2 cup plain yogurt and then combined all ingredients in a food processor to get a smooth creamy, sweet, and savory bowl of goodness.

Vegetable Melange

I used this sauce to dress up frozen veggies for a really quick side. I ran out of yogurt so I used sour cream and we just loved the fruity tangy curry pop this gave to plain frozen veggies. We found it a bit flat the second night so best served fresh.
