Easy Raspberry Sorbet

We liked the idea for this light, refreshing cold dessert on a warm evening, but the lemonade concentrate really gave it a harsh intensity that we didn't care for.

Grilled Salmon Steaks with Savory Blueberry Sauce

I came across this while looking for a recipe to use up some leftover blueberries. It didn't come out like I expected. The sauce was too acidic for us. I ended up pureeing it with some honey. I used it for 2 meals. It was better the time I brushed it on the fish and broiled rather than serving over cooked fish.

Goat Cheese Torta

This was super yummy, just the right combination of sweet and spicy. The only change I made was using a cherry-jalapeno jelly instead of cranberry.

Soundview Crab Salad

Summer Pasta with Basil, Tomatoes and Cheese

My boyfriend usually won't eat raw tomatoes, but, we really enjoyed this side. I did cut the oil and cheese way back to make it healthier.

Peanut Butter Chocolate Chip Zucchini Muffins

I needed to use up some extra zucchini and this was the perfect choice. I used a little less sugar and cocoa powder and a bit more garam masala and they were a huge hit at work.

Chipotle Chicken Salad

I took this recipe and added a can of corn, a can of black beans, and a couple tomatoes and tossed with the dressing made with 1/2 mayo and 1/2 sour cream and served on a bed of lettuce for an entree salad. My boyfriend is still raving about it.

Pumpkin Casserole

I have been making this for years and it's always a hit. I've given the recipe out so many times and it still surprizes me how often I'm told it just wouldn't be a holiday dinner without Pumpkin Casserole on the table!

Sweet and Spicy Tuna Salad

I used a tsp of sriracha and stuffed this into zucchini boats and baked it. We're not big tuna fans, but I'll be making this again and again.
