Grilled Poblano Pepper and Mango Quesadillas

I added some crab to the mix and stuffed into portabella mushroom caps and baked for 12 min at 400 degrees and there turned out so amazing. We splashed on a bit of hot sauce and it was a mouthful of love

BBQ 'Pulled' Tuna Sandwich

I made this filling and served it in mushroom caps and we were really surprised how much we liked it. Although we agree the tuna is really just a vehicle for really good bbq sauce.

Gingery Carrot Salad

I'm always looking for new things to do with carrots and this sounded like a great summer salad. I used craisins instead of raisins (personal preference) and served with Asian salmon. We found it enjoyable, but nothing we would make again

Miso Maple-Glazed Salmon

Loved this! I used a Korean seasoned miso because that's what I had and cooked the fish under the broiler for about 5 mins, then brushed with glaze and cooked 2 more mins, brushed with the last of the glaze and broiled 1 min longer. Sweet and spicy just the way I like it.

Oriental Green Bean Salad

I served this with the "Miso Maple Glazed Salmon" also from this site and dinner was perfect. Simple and quick. Only change I made was adding a bit of mirin to balance out the saltiness.

Pepper Jelly Glazed Chicken

Super easy, but next time I would add a bit of cayenne to the mix. The long bake time takes a good bit of heat out of the jelly and we like it spicy.

Moroccan Cooked Pepper Salad

I had some tomatoes and peppers in need of using up and this was a great little recipe. I used capers instead of olives (personal preference) for that briney pop and left out the oil completely. Very enjoyable summer side.

Greek Yogurt Parmesan Chicken

We really enjoyed this very moist chicken and it was so quick and easy. I mixed everything together in a bowl, dumped in the chicken, stirred to coat and transferred the whole thing to a baking dish. Baked then broiled and ended up with a lovely crisped and toasted top.

Chicken Diablo

This was an instant hit at our house. The only change I made was using fat free plain yogurt (because that's what I had) and I skipped cooking it in oil just used a spray, then poured all the extra marinate into the skilled to simmer at the end rather than dirty another dish.

Blackberry-Infused Tequila

I very often make a lime tequila cordial just for sipping over ice and thought the addition of blackberries would be a fun twist. Very enjoyable with the lime flavor to brighten up the earthy blackberries. Next time I would use less berries.

Grilled Chicken Breasts with Fresh Strawberry Salsa

I combined all the marinade ingredient with some strawberry yogurt and used a bit of strawberry jam and balsamic vinegar in the salsa. This was a very enjoyable way to use fresh strawberries

Harvey's Moroccan Roast Chicken

I used fat free yogurt to make the spice paste, but did everything else according to recipe. We very much enjoyed this moist flavorful chicken with a very predominate lemon flavor. If I made again I would cut back on the juice to let the other flavor out a bit more

Chipotle Ranch Dip

It's amazing what a few simple additions can do to a basic dip. I used 1 part lite mayo and 2 parts fat-free sour cream (our personal preference) and a homemade dry ranch mix. A touch of milk and it was perfect for dipping tortilla chips.

Finger Lickin' Onion Dip

I reduced the sour cream to 1 cup and added 1/2 cup plain yogurt and then combined all ingredients in a food processor to get a smooth creamy, sweet, and savory bowl of goodness.

Indian Hot Curried Mangos with Tofu

Except for adding a red bell pepper for some crunch I followed the recipe exactly and I love all the ingrediants, but we found this to be really bitter. Maybe just my type of curry powder coupled with the amount, I don't know but I won't make again

Southwest Squash Casserole

A bit of flour stirred into the sauce helps with the watery factor for squash dishes, but truthfully we found this dish to be quite bland. It really needed a healthy dose of bold spices to jazz up a plain cream sauce.
