Bourbon-Mango Pulled Pork

I used bone -in chicken breast (we don't eat pork)and cooked about 31/2 hours, then added some mushrooms to the pulled meat and homemade apple-bourbon bbq sauce. Then stuffed the result in red bell peppers and baked. AWESOME! Instant hit in our house. Well worth the time it took to make.

Mango Chicken Bake

After reading all the reviews I tripled the curry paste and added a bit more rice. The result was bland chicken and mostly bland and mushy rice. Sounded great, but just didn't work for us

Sweet and Sour Zucchini Salad

This is my go to recipe when zucchini is in season, but after adopting a healthier lifestyle I made a few switches to reduce the fat and calories. I used 1/2c of fat-free Italian dressing instead of the oil, cider vinegar, salt and pepper. Replaced the sugar with no calorie sweetener and used a whole red bell pepper. It was a hit.

Caramel Macchiato Banana Bread

Awesome flavor combo! I made a few changes to fit our lifestyle and ingrediants I had on hand. I subbed applesauce for half the butter, disolved the coffee in 1/4c of water, and stirred 2T of powdered caramel vanilla creamer into the flour mix.

S'more Brownies

Super fun brownie topping idea! I don't even like s'mores, but I made a selection of flavored brownies for an ice cream social at work and these were the biggest surprize. I used the Healthier best brownies recipe instead of box mix and they rocked! Althought next time I'll probally bake the topping for a few mins less so the marshmallows don't melt quite so much

Healthier Best Brownies

I made these exactly as written except that I skipped the frosting and used this as a base for the S'more Brownie recipe. My chocolate brownie loving BF raved from his first bite. Said they were the best brownies I had made so far...I didn't bother to mention the healthy part ;)

Peanut Butter-Banana Blammo! Brownies

Peanut butter and banana are a favorite flavor combo of mine so of course I had to try this recipe. The brownies were thin, but moist and rich. I could taste the banana and the peanut swirl on top but for some reason it just didn't all come together for me.

Masala Chai Brownies

We found these brownies enjoyable but the flavor didn't wow us. I added extra cinnamon and cardamom to the batter to boost the chai flavor, but it was still very mild.

Spicy Yogurt Dressing

I used plain greek yogurt and followed the recipe exactly. The result was cumin flavored yogurt and definatly not spicy. I ended up adding an extra tablespoon chili sauce and a tablespoon on mayo and tossed it was zucchini slaw. Not something I'll be making again

Banana Chai Bread

This has been a staple in my recipe box for years. The cream cheese gives such a different texture. I do like to add some extra cardamon and cinnamon.

Red Velvet Cheesecake Swirl Brownies

I was really excited to make these for an ice cream social at work, but I accidently made them a week early and I'm glad I did because I would not have been proud to serve these. They lacked that distintive red velvet flavor and the cream cheese layer was more bland than rich and creamy and very thick, half would have been enough.

Thai Noodle Salad

The peanut butter/ tahini combo with the chili sauce really makes this dish. I used imitation crab due to allergies, thai rice noodles instead of pasta, and added a healthy dose of siracha becuase we like things spicy.

Chicken Tequila Fettuccini

This was an instant hit at my house. I like bold flavor so I doubled the jalapeno, tequilla, and lime juice, plus tossed in the lime zest just before serving. So Yummy!

Banana Margaritas

This turned into a 4th of July hit. We did add more triple sec and a bit of sweetener brought out the banana flavor. My BF really doesn't like margaritas becuase of the sour mix, but happily enjoyed these with me.

Menny's Blueberry Barbecue Sauce

This sounded like the perfect way to use some extra bluedberries, but this sauce tastes neither like blueberries nor bbq sauce. We tried it plain as a dipping sauce, baked onto chicken and fish (it was best on chicken) and while we love all the ingrediants it just didn't live up to the flavor profile I thought it would have

Warm Green Bean and Potato Salad with Goat Cheese

This was a hit from the first bite. I used fresh green beans and subbed feta for goat cheese because it had it on hand. We enjoyed this warm the first night and cold the second and it was great both ways

Asian Pasta Salad with Beef, Broccoli and Bean Sprouts

We choose to skip the pasta and serve the meat and veggies over a bed of lettuce with dressing over top. Only changes we made were using chicken instead of beef and plain greek yogurt instead of the vegetable oil in the dressing. This was an instant hit as a dinner salad. We loved the spicy, creamy asian flavors with sweet pops and crunch from the veggies.
