Jalapeno Potatoes

This is a plate of spicy creamy yumminess. To reduce fat and calories I subbed chicken broth for the milk and after it thickened I stirred in the jalapenos, shredded velveta, and 1/4 cup of fat-free sour cream.

Winter Chicken Bake

I really want to love this dish. It has all the flavors I love plus it's so easy, but after several tries with different alterations I still feel it is lacking flavor or richness or something every time I make it.

Evil Turkey

I rubbed the pepper puree under and over the skin as well as in the cavity before filling. I guess I was hoping for some smoky spiciness but we found this pretty bland and ended up breaking out the bbq sauce.

Butternut Squash Enchiladas

I made the filling with frozen spinach and 2 fresh tomatoes diced and folded in squash that I had roasted with a bit of ancho powder and garlic salt. I stuffed the filling into halved bell peppers and poured the enchilada sauce over top. Covered and baked. Only stuffed peppers my BF has ever liked and asked me to make again.

Butternut Squash and Cranberry Couscous

I cooked the couscous in 2 cups broth for more flavor, added some mushrooms that needed to be used, and only added the juice from the lemon I zested. We really enjoyed this. Good both warm and at room temp. Would not make again without the mushrooms though.

Peanut Butter Jalapeno Poppers

I found this recipe while looking for something different to do with a bunch of jalapenos that needed to be used. I don't fry things but I was really curious about the flavor combination. I mixed the cheese, peanut butter, chutney, and Cajun seasoning together and stuffed the mix into a dozen jalapenos that I halved and seeded, then pressed the tops into a bowl of panko and baked for 15 mins. I took them to a potluck at work, served with a creamy garlic dressing and they had everyone talking about how good and different they were.

Coconut Jerk Chicken

We found this very enjoyable and loved the butternut and mushrooms. Leftover were better than the first night. Good but overall lacked the WOW factor of us.

Hot Asiago Dip

I doubled the jalapeno and thinned with milk to a more dippable consistency and served with tortilla chips. I really enjoyed the green jalapeno flavor but my BF refused to eat it a second time.

Garlic Roasted Chicken and Potatoes

My family makes homemade maple syrup and I've been making this for years. Amazing the way the garlic becomes candied with the syrup. I sometimes add 8oz fresh mushrooms quartered.

Squash Dip

I love butternut and goat cheese as well as sweet/savory combinations and I really wanted to like this. It was better when first made, but I needed to add a lot of milk to thin it to dippable consistency. We served pumpkin tortilla chips.

I've Lost My Noodle Vegetarian Lasagna

We were amazed how much this tasted like lasa. I prepared the squash more traditionally: baked and scraped out of the shell then drained. I've also found if I add a couple tablespoons of flour to whatever sauce I'm baking the squash with it really helps the watery factor. I added spinach to the cottage cheese layer and mushrooms, tomatoes, and bell pepper to the spaghetti sauce just because I had them and they needed to be used up. Amazing!

Baked Spaghetti Squash with Beef and Veggies

I was looking for a recipe to help clean out my fridge and this fit the bill. I used half the meat and cheese and double the spices and veggies plus some. I also strained the squash after removing from shell and added a couple T tomato paste to the sauce to reduce the watery factor this type of veggie is known for

Chipotle Tilapia Tacos with Mango-Cilantro Salsa

Used this as an inspiration for my Fish Taco Salad. We love spicy food but as written this fish was way to hot for us. Subbed ancho powder and decreased the amount and it was awesome. Lined plates with romaine, then with shredded cabbage and mango salsa and topped with fish. Modified the "Chipotle Mayo Relish" recipe into a dressing and found a healthier way to love fish tacos.
