Robin's Quinoa with Mushrooms and Spinach

I used swiss chard instead of spinach (personal preference) and a bit of balsamic vinegar instead of wine which was the perfect side for chicken with strawberry salsa

Grilled Chicken Breasts with Fresh Strawberry Salsa

I combined all the marinade ingredient with some strawberry yogurt and used a bit of strawberry jam and balsamic vinegar in the salsa. This was a very enjoyable way to use fresh strawberries

Harvey's Moroccan Roast Chicken

I used fat free yogurt to make the spice paste, but did everything else according to recipe. We very much enjoyed this moist flavorful chicken with a very predominate lemon flavor. If I made again I would cut back on the juice to let the other flavor out a bit more

Chipotle Ranch Dip

It's amazing what a few simple additions can do to a basic dip. I used 1 part lite mayo and 2 parts fat-free sour cream (our personal preference) and a homemade dry ranch mix. A touch of milk and it was perfect for dipping tortilla chips.

Finger Lickin' Onion Dip

I reduced the sour cream to 1 cup and added 1/2 cup plain yogurt and then combined all ingredients in a food processor to get a smooth creamy, sweet, and savory bowl of goodness.

Indian Hot Curried Mangos with Tofu

Except for adding a red bell pepper for some crunch I followed the recipe exactly and I love all the ingrediants, but we found this to be really bitter. Maybe just my type of curry powder coupled with the amount, I don't know but I won't make again

Southwest Squash Casserole

A bit of flour stirred into the sauce helps with the watery factor for squash dishes, but truthfully we found this dish to be quite bland. It really needed a healthy dose of bold spices to jazz up a plain cream sauce.

Spicy Sweet Potato Soup

I added a couple tsp of thai seasoning which seemed to bring the flavors together, but as much as I love peanut butter in soup this was a bit heavy handed. If I made again I would only use half as much.

Margarita Chicken II

I made the sauce as directed, but cooked the chicken in a skillet and added the sauce to the second half for the cooking time. We really were looking forward to this recipe. It sounded so good, but unfortunately it just didn't suit our taste. We found the sauce to be very bitter and it's just not something I would make again.

Roast Peruvian Turkey

Please don't be afraid of the ingredients list. This turkey is amazing. I've made it twice now and my BF drools and begs every time he walks into the kitchen which smells absolutely amazing. Only change I made was to use lite mayo instead of oil and fat free sour cream with flour instead of crème fraiche. We do prefer to bake this covered for a couple hours and then uncover for the last hour.

Zesty Chipotle Lime Dip

I scaled this down to make just one cup and left everything the same until I realized I didn't have any chipotle powder so I used the adobo sauce from a can of chipotle peppers and some smoked paprika. Love at first bite!

Vegetable Melange

I used this sauce to dress up frozen veggies for a really quick side. I ran out of yogurt so I used sour cream and we just loved the fruity tangy curry pop this gave to plain frozen veggies. We found it a bit flat the second night so best served fresh.

Pork Chops with Blackberry Port Sauce

Like many others I couldn't find blackberry juice so I used a cherry apple juice and we really loved this part of the sauce although it was a bit thin for our taste. The whole blackberries were the downside of this recipe for us. If I made again I'd cut back on the broth, add some blackberry jam and skip the berries.
