Roast Peruvian Turkey

Please don't be afraid of the ingredients list. This turkey is amazing. I've made it twice now and my BF drools and begs every time he walks into the kitchen which smells absolutely amazing. Only change I made was to use lite mayo instead of oil and fat free sour cream with flour instead of crème fraiche. We do prefer to bake this covered for a couple hours and then uncover for the last hour.

Zesty Chipotle Lime Dip

I scaled this down to make just one cup and left everything the same until I realized I didn't have any chipotle powder so I used the adobo sauce from a can of chipotle peppers and some smoked paprika. Love at first bite!

A New Green Bean Casserole

We loved the caramelized onion portion of this recipe although I did cook mine about twice as long, but we found the beans bland. It needed something to tie the layers together

Vegetable Melange

I used this sauce to dress up frozen veggies for a really quick side. I ran out of yogurt so I used sour cream and we just loved the fruity tangy curry pop this gave to plain frozen veggies. We found it a bit flat the second night so best served fresh.

Pork Chops with Blackberry Port Sauce

Like many others I couldn't find blackberry juice so I used a cherry apple juice and we really loved this part of the sauce although it was a bit thin for our taste. The whole blackberries were the downside of this recipe for us. If I made again I'd cut back on the broth, add some blackberry jam and skip the berries.

Butternut Squash Cajun Fries

So simple I'm kicking myself for never thinking to make "fries" from butternut. I upped the Cajun seasoning a bit and served with a tabasco spiked tarter sauce.

Molly's 'Wannabe' Jalapeno Popper Party Dip

I preferred this saucepan cooked dip to many of the baked versions I've tried. I added a good bit of plain fat free yogurt to thin it to a more dippable consistency and added a few more jalapenos because we like spicy.

Maple-Bacon Chocolate Chip Cookies

5 stars for a great idea! Like many others I made a few adjustments to get cookies perfectly suited to our taste. Added an extra 1/2 cup flour, 1/2 tsp baking powder, 1 T real maple syrup, and increased bacon bits to 1/2 cup and used only 1/2 cup mini semi-sweet chips. I made smaller cookies and ended up with about 5 doz and baked for only 9 mins. Perfect-rave reviews from my work and my BF's

Honey Curried Roasted Chicken and Vegetables

SOOOO Good! I cut the potatos and carrots into large pieces and put into large roasting pan raw with chicken covered and cooked 45 mins. Uncovered and added mushrooms and apples coated with sauce made with honey dijon dressing to reduce cost and calories and baked uncovered 30-45mins. Best new roasted chicken recipe I've come across in a long time

Muffuletta Pinwheels

I chopped the olives and combined with spices and cream cheese leaving out the oil and spread over tortillas before layering meat and cheese. While we really liked these they just didn't stand out to us.

Black Bean Stuffed Peppers

I used a chipolte flavored cream cheese and frozen spinach as well as leaving off the cheese and topping with a jalapeno cream sauce. I had too much filling for the 4 peppers I needed. I'd probally use only half the rice and boost the flavor level if I made these again.

Bok Choy and Shiitake Stir Fry

Soy, miso, and oyster sauce...salt, salt, and more salt plus 15 min cooking time turned the bok choy to mush. Could have good potential but we found this almost ineatable.

Soo Good! I used one can each green, black, and kalamata olives with a semi-sweet wine and only 1 T olive oil. They get even better after sitting a few days.
