Sour Cream Mushroom Dip

I left out the butter and just sauted onion and mushrooms in sprayed skilled until most of the liquid evaporated then followed the rest of the directions using fat free sour cream and velveta shreds except left the extra cheese off the top. Served with tortilla chips. Creamy and mushroomy goodness.

Thai Hummus

Worth the trouble to find all the ingredients. Exotic flavor with a sweet pop combine with the deep chickpea flavor to create an amazingly new combo.

Cream Cheese Chocolate Chip Bars

These were a huge hit at our holiday potluck. I baked for 60 mins at 300 and chilled overnight before cutting and they were perfectly cooked. They are very sweet and the sugar and chips could both be cut back. So many possibilities for flavor combinations between the cream cheese and the crust

I used reduced fat cream cheese and mayo as well and then added 1 cup low-fat shredded cheddar. Super easy and tasty spread for buns or crackers

Spinach Artichoke Hummus with Roasted Red Peppers

This was a really fun idea and I was excited to try it. In the end I needed to double the artichokes, add a healthy dose of lemon juice, and one more garlic clove, raw to make it suit our tastes.

Nutella® Peanut Butter Pretzel Cookies

I used 2 cups of flour and 3 egg whites also added 1 cup butterscotch chips. I was heavy handed with my spoonfulls so I baked for 10-12mins and they were soft and chewy, but the pretzel bits weren't so great. Loved the salty pop, but the texture was not so appealing.

Chicken Florentine Salad with Orzo Pasta

This was the perfect recipe to use up a few things in the fridge. I used more pasta and less spinach, left out the chicken and made only half the dressing. Very Good.

Sweet Potato, Pear and Pineapple Bread Pudding

I served this for Thanksgiving with our maple glazed bourbon turkey and the flavor complimented the meat very well. After reading the other reviews I increased the bread cubed to 6 cups and let them dry in the oven while preheating so they would absorb more liquid and this easily filled a 2 qt baking dish which needed to be baked twice as long as recommended. We don't care so super sweet so I left the topping off.

Jalapeno Potatoes

This is a plate of spicy creamy yumminess. To reduce fat and calories I subbed chicken broth for the milk and after it thickened I stirred in the jalapenos, shredded velveta, and 1/4 cup of fat-free sour cream.
