Mulberry Muffins

WOW! These were awesome. I used 3/4c white sugar, 1/2c blueberry yogurt, 1/4c applesauce, and 1/4c sour cream because that's what I had. Folded in 1 cup frozen mulberries and baked into yummy perfection.

Peach Muffins

These were very enjoyable muffins. I used a combination of peaches and mulberries, mostly because I ended up being short on peaches and added a tsp of almond extract.

Seafood And Cabbage Salad

I've been making this salad for years, but recently I have begun subbing 3/4 c fat free sour cream for some of the mayo and increasing the amount of hot sauce. Sometimes I add some old bay or cajun seasoning to change up the flavor.

Honeyed Habanero and Toasted Garlic Tartar Sauce

Heat is definatly a matter of personal taste. I used 1/2 a red habanero, but followed the recipe exactly otherwise. We loved this super flavorful sauce which I served with some simple swordfish steaks. If you eat fish because you love tarter sauce this is a must try!

Spiced Peach Oatmeal Muffins

I love peaches and molasses and I normally reduce the amount of sugar in baking recipes. That said I followed this recipe exactly and these were some of the worse muffins I've ever tried. Just not sweet and the molasses overpowers the peaches.

Spaghetti Squash Casserole

This was a very enjoyable creamy side that I served with a spicy bbq chicken. The flavors were simple but good. The only change I made was to use panko instead of bread cubes on top. If I made again I would sub some italian dressing for part of the sour cream.

Roquefort/Bleu Cheese Dressing

I made this a blue cheese flavored cream cheese type product and used it to drizzle over a buffalo chicken salad. For us it's mild flavor and intense creaminess were a perfect compliments to our extra spicy chicken.

Vietnamese Chicken Salad

While we didn't overly care for this as a chicken/cabbage salad, but we did love the dressing. The only change I made was to sub lite mayo for the vegetable oil.

Bananaramas

I made these using a bit less sugar and peanut butter, left out the almond extract and nuts and then took them to work. The entire batch was gone in under three hours and I got several requests for the recipe, even my BF who doesn't care for banana anything kept snitching them.

Frosted Banana Bars

These bars came out so light and fluffy and so different from regular banana bread. I used fat free plain yogurt, a bit less sugar, and a store bought chocolate frosting. Next time I'd skip the frosting these bars are great without.

Mild Thai Beef with a Tangerine Sauce

This was a keeper from the first bite. The only change I made was to use fresh orange juice instead of sherry. We like spicy thai but really enjoyed the flavors of this dish.

Mediterranean Zucchini and Chickpea Salad

I combined the veggies and cheese and served on top a bed of lettuce as a dinner salad. I replaced the olive oil with lemon greek yogurt and a bit of mayo added the vinegar and spices and thinned a bit to use as a dressing. Very refreshing

Peach Cake II

I would give this a 3, but my BF (who doesn't care for sweets refused to let me bring the leftovers to work and ate the whole pan) would say 5. I used 1/2 c applesauce and 1/4 c melted butter instead of the oil to cut calories and all the cinnamon becuause we love it. Definately better the second day

Grand Marnier Brownies

Wow, super rich, moist, chewy brownie flavor. I replaced half the butter with applesauce, used semi-sweet chcoclate, and a bit less sugar. Chocolate orange isn't my favorite combo but many people at work loved these.

Chicken Mango Salsa Salad with Chipotle Lime Vinaigrette

This sounded so good, but the broccoli slaw, fruit salsa, and blue cheese flavors just didn't taste good together. The dressing was so acidic my BF asked me to make something else just so he could finish the salad. Since this made two nights worth of food I created a creamy bbq honey mustard dressing for the second night and the difference was huge. The new dressing really made the flavors blend.
