Sweet and Spicy BBQ Chicken Dip

I tried this for a potluck at work and everyone loved it. I was one of the first dishes gone. It's a bit sweet and a touch spicy and the soup adds a creamy savory quality that is very unique, but no one ever guessed there was canned soup in it. I chopped the chicken pretty small, but this dip still needs fairly sturdy chips to hold up to it.

Ginger Honey Drunk Chili

Certainly one of the more interesting chili recipes I've tried. At first it tastes like tomato or vegetable soup and then there is this burst of sweet heat on the finish that is really different.

Warm Jalapeno Cheese Dip

We really enjoyed the smooth texture and it was just the right thickness to dip without a ton of drips everywhere. Added a few fresh diced jalapeno just because I had them.

Spicy Chicken Thai Soup

Fairly bland. I did not cover the pot while simmering the broth with the aromatics and I would recommend doing as so I did not end up with much broth left to mix with the coconut milk.

Zucchini Soup II

I had a bunch of zucchini I need to use up so I gave this recipe a try. Enjoyable enough but the smell and the texture are sorta offputting. The flavor is good but not really interesting.

Hot Wheels Pasta

We found this to be an enjoyable low calorie meal, but I thought the sweet and spicy flavors would be more bold. Tasted most strongly of canned tomato sauce, but the zucchini, peppers, and pasta were a nice array of textures. Not something I would make again without a lot of changes, but I really liked the concept.

Poblano Chicken Enchilada Casserole

This was an instant hit for dinner last night. Only a couple small changes: I dissolved a bouillon cube in the half and half and used a combo of dried cilantro and fresh parsley in the sauce. and reduced the cheese to only one cup. I skipped the tortillas and layered the chicken, cheese, and sauce over broiled slices of polenta. Top with a bit of hot sauce for serving and it was just amazingly different combination of flavors and textures.

Black Bean and Quinoa Enchilada Bake

I cooked the quinoa in broth (because I always do), used fresh parsley in place of the cilantro (because I don't like it), and sprinkled the top with only 1 cup of reduced fat cheese to cut calories and we just loved this. We had it as a light dinner but would make a great side as well

Roast Chicken with Tomato Gravy

This recipe looks simple and rather uninteresting but I needed to use up some of my mom's homemade tomato juice, so I tried it and the only change I made was to stir 1/4 cup of BBQ sauce into the juice to give it a bit more body and depth of flavor. So much better than I was expecting. This chicken jumped into our all time favorites pile after the first bite.

Slow Cooker Mediterranean Stew

I left out the okra (we can't stand it) and used sweet potato instead of butternut followed the rest of the directions and left to cook on low for 7.5 hours. We had small bowls for lunch the following day and threw the rest in the trash. We found the taste bad enough but the consistency of the mush was worse.

Ratatouille Fettuccine Alfredo

You should have seen the face my BF made when I had him read this recipe and after I made it ... He made me promise to make it again and again. Only sub I made was to use spaghetti squash instead of pasta and I accidently stirred in the whole can of pumpkin because I wasn't paying attention, but I would totally do it again. Love this!

Pork Chops with Apple Curry Sauce

Such a great dish for cold weather. I used chicken breasts instead of pork, a granny smith apple, and only 1/2 cup of water with 2 T curry powder. Served with a pumpkin and cauliflower puree. So perfect

Spicy Mango Sweet Potato Chicken

The flavors in this sounded so good, but I didn't want the pasta so I used 4 sweet potatoes which I cubed and roasted. I cooked 8 boneless chicken thighs first, then set them aside. Sauted the garlic, mango, and added a red bell pepper for 5 mins then poured in a combination of 1 1/2 cups water, 1/4 cup lite soy, 1/4 cup sweet soy, 1/4 cup honey, 1/4 cup chipotle tabasco, and 2 T sambal. Thickened with cornstarch and served sauce over chicken and potatoes. Sweet, savory, and nicely spicy. Instant hit at my house

Pesto Spaghetti Squash

I used a bunch of swiss chard, chopped and an 8oz pkg of mushrooms, sliced to make 4 nice side servings. Even with a double dose of our favorite pesto we though this was good but didn't really jump out for us. I does compliant chicken with tomato type sauces very well.
