J.P.'s Big Daddy Biscuits

I too, could not for the life of me make biscuits until I found this recipe! Being from the south, it's EXPECTED that I know how to make biscuits! I used buttermilk and since it's thicker, was able to follow the measurement called for in the recipe. I doubled the recipe and used both shortening and butter (only had 1 stick). I increased the sugar slightly based on some other reviews. This is a fantastice recipe and a great base to experiment with.

Tiger Butter II

I used crunchy peanut butter and added some to the dark chocolate mixture as well. My daughter had a lot of fun swirling it to make the 'tiger'. I let it set up slightly in the fridge before cutting it - I used a pasta measuring tool that I never use for pasta - it has a curved edge on one side that was perfect to use as a blade. I imagine you could cut it with a pizza cutter as well. We got awesome comments on this candy - it's rich and creamy. We will definitely make this every Christmas. Thanks!

Sausage Stuffing Balls

I made these to take to a New Year's eve party. I doubled it and used two boxes of Stove Top chicken flavor, two rolls of Jimmy Dean sage sausage and I added a 16oz. package of finely shredded cheddar/jack cheese. I omitted the onion and celery but added some onion powder (running short on time). I missed the part about changing the temperature setting and ended up cooking these on 350 for the entire time, but did follow the instructions for covering the batch. Nearly all of them were eaten and I got many compliments. Even my husband who doesn't like sausage really liked them. I will definitely use this one again! Thanks!

Banana Sour Cream Bread

Awesome recipe - perfect texture and flavor. The sour cream makes the difference. Impressed my mother-in-law and grandmother-in-law (who is an AMAZING cook). I halved the recipe and only used 3/4 cup of sugar (will probably try Splenda next time). I used a 1/2 cup of chopped pecans and added cloves just because I love them. I used brown sugar in the cinnamon dusting mixture, reserving about 1/3 of it. To that, I added about a T. of softened butter to make a crumble topping; sprinkled it on top and baked it in a large loaf pan (took about 80 min. to cook). The topping was nice and crunchy. Will definitely make this again!

Easy Decadent Truffles

This is an awesome recipe! I also used 2c. chocolate and 2c. powdered sugar. I dipped mine in chocolate after rolling them to get the nice candy shell. So rich and creamy. Thanks!

Best Italian Sausage Soup

This was so hearty, aromatic and rich in flavor! I made a few minor changes: used 1 C. white wine, one and a half rolls Jimmy Dean Italian sausage, heaping half t. of basil/oregano. Cooked it on the stove for 2 hours and during the last 15 minutes, put in cheese filled tortellini (Bertolli makes a small bag that serves 2-3 that was the perfect size). This is a keeper and I've already shared it with two other cooks I know. Thanks, Perri!!!

Chocolate Rum Cake

This is an awesome cake! I used the SuperMoist chocolate cake mix that has the chocolate morsels in it - this is a very dense, moist cake. And, not too heavy on the rum flavor.

Broccoli Rice Casserole

I cut down the recipe a little and used only a 15 oz. package of broccoli. Also used milk - about 3/4 of a cup. I topped this with some grated cheese and crushed up Ritz. I also added some dehydrated onions, about a 1/2 t. of garlic powder and pepper. The salt from the soup was enough for the dish.

"Zuccotto" Cupcakes

Microwave Spiced Nuts

Excellent recipe. I made a few changes to make it lower in carbs. Used 1/3 C. Splenda and added a handful of brown sugar, added 1 t. chili powder, omitted the nutmeg (added a shake of cloves instead); upped cinnamon to 1 1/2 t. Mixed in almonds and salted cashews. YUMMY! I was worried that the Splenda would give an after taste, but it didn't.

Hot Spinach and Artichoke Salad

My boyfriend and I really enjoyed this dish. Only change I made was in how I assembled it. I tossed the spinach, onions and artichokes (sliced into bite sized pieces) in a large bowl with the olive oil and artichoke liquid, then placed on a baking sheet and sprinkled with the feta and a little course ground black pepper.

Thai Quivering Tenderloins

My boyfriend actually said, "Wow!" to this dish. The only change I made was the omission of the cilantro - broke my heart because I LOVE cilantro, but I forgot to pick it up at the store. Only change I'd make next time is to cut the red pepper flakes in half - the sauce had quite a bite to it.
