Red Lentil Curry

Easy to make and very yummy! I took someone's advice and didn't fully cook the lentils prior to adding. Probably about 25 minutes on their own. Had to make my own curry paste, which was pretty spicy so we added coconut milk to it as we ate.

Buttermilk Coleslaw

I just made this and although I know it will be better after sitting a bit, I am loving a big bowl now! I substituted splenda for the sugar, and used milk with vinegar for the buttermilk. I also shredded my veggies by hand, it tastes much fresher!!

Mediterranean Lentil Salad

My first time making (and eating) lentils and this was so easy and SO yummy! I doubled the dressing, and added a touch of liquid aminos to my own bowl. Thanks for the great recipe!

Rich and Creamy Tomato Basil Soup

Exactly as written, but didn't seed or peel tomatoes. So good! The freshness and richness at the same time make this perfect for company and the simplicity makes it perfect for anytime (although the calories deem it special)

Spinach and Feta Pita Bake

YUM! I didn't do the mushrooms, the family isn't fans... but wish I did them on mine! I prebaked the pitas for about 7 minutes, then added all as written. Cooked about ten minutes, then added fresh cut basil and mozzarella (just a sprinkle) and put back into the still warm but off oven until mozzarella melted. I think we are making these again tomorrow for lunch with our leftover ingredients!!!

Baked Fried Eggplant

Very good place to start! Adding the sour cream gives the breading a thickness and helps it stick so much better for bake-fake frying! I mixed the breadcrumbs with panko, and cubed tomatoes, mixed in salt and some high quality EVOO to top the eggplant with. Hubby was very happy. I look forward to trying this crumbing with other veggies too!!!

Zucchini Fritters with Fresh Mozzarella and Tomato

Followed exactly- so yummy! Be sure to mix the dry ingredients first, add zucchini and mix very well to coat prior to adding egg mixture. I can see myself manipulating this in the future, but it is fantastic as it is! Must use fresh, good quality ingredients!!!

This recipe is fantastic! Def a family favorite, thank you so much for sharing. I double the sauce to freeze, and add a touch of nutmeg to the ricotta. This always gets a "Yay" from the kid, which makes my heart smile!!!

Chayote Squash Side Dish

I got three squash in my Bountiful Baskets and had no clue what they were or what to do with them! I followed the recipe but used lime juice over vinegar as suggested, and a bit more red pepper. Pretty yummy!!! I think my whole family will enjoy it if I used less pepper, so this batch is all for me!

Chicken with Sun-Dried Tomato and Roasted Pepper Cream Sauce

Hubby gave this five and I give it three. I think if I had used fresh herbs it would bring it to a four star. It has pretty good flavor, but didn't wow me. We will try it again though, since my husband really enjoyed it and it was sooo easy!
