First time I made it, I followed the recipe exactly, and it's delicious and VERY easy. I only gave it 4 stars because, even using half the curry paste and chili powder, it was still too spicy for most of my family. I used red curry paste and Indian chili powder (very different from Mexican chili powder). I love it, but it's still too spicy for my husband and all but one of my kids. 2nd time making it, I used 1/2 the curry paste and 1/8 of the chili powder. I also added a cinnamon stick and a few green cardamom pods to the onions as they were sauteeing. I served it with plain yogurt as another reviewer suggested to cut the heat. Also, I served it with a dab of cilantro/mint chutney I made a few days ago, and it is out of this world. One of my new favorites!
