Libby's® Pumpkin Roll with Cream Cheese Filling

This was moist and delicious. I used a baking sheet instead of a jelly pan and had excellent results. I also put the powdered sugar covered towel on top of the cake while it was still in the pan, then put a large baking rack on top of that and THEN flipped the whole thing over. The first time I tried to flip the cake onto the towel it all landed on the floor. Be sure to let the cake cool all the way in the towel before you try adding the filling, ortherwaise the filling gets too loose and runs out the side. I would also recommend using about 1/4 cup less powdered surgar in the filling.

Puff Pastry

Buttery, crusty and browns nicely. I didn't have time to refrigerate it over night, so I stuck it in the freezer for about 20 minutes then refrigerated it for about another 15 minutes and it worked just fine.

Sour Cream Chocolate Frosting

Delicious and super easy to make. Like other reviewers I only needed about half the recommended amount of powdered suger to achieve the right consistancy. You should also know that the frosting is extremely sweet, so go easy with it. In addition, be sure to sift the sugar so you don't end up with lumpy frosting.

Eggplant Parmesan I

The best eggplant parmesan I've ever had. Next time I think I will double the ricotta mix. That will help use up the whole tub and will fill the cheese layers out more. Be sure to allow time for this to cool, as it will be soupy and hard to serve if you try to cut it directly after pulling it out of the oven.

Easy Vodka Sauce

With the addition of about 1 1/2tsp of sea salt this is fantastic. I pureed about 2/3 of the sauce after cooking it. This helped thicken it up a little and smoothed out the flavors. After pureeing it I just added it back into the remainder of the chunky portion.

Grilled Chicken Thighs Tandoori

I took another reviewer's suggestion and left the marinade on and baked the chicken in the oven at 400F for 25 minutes. It came out juicy and tasty, but was much wetter than the chicken tandoori I've ordered at restaurants. I will definately make this again. Use bone in/skin on thighs & add spices to marinade.

Soft Giant Pretzels

Awsome!!! I used corn syrup like another reviewer suggested and it really worked to make the pretzels chewy and soft. We did half the dough as pretzel bites and half as twists. The bites went the fastest and are fun to eat. This was extremely simple and quick to make.

Yellow Squash Casserole

Very delicious. I didn't have any egg on hand so I just added about half again as much cheese and 3 tablespoons of flour. I also sprinkled some extra cheese on top and a mixture of 1/4 cup bread crumbs and 1 1/2 tablespoons of olive oil. The topping added an extra crunch that made the dish more enjoyable. I also only needed to cook the dish for about 15 minutes since the squash was already cooked.

Purple Plum Pie

AMAZING! My husband said this was the best recipe I'd ever found on the site and I've been using Allrecipes for years. I bought a big bucket of plums at Costco and we just weren't eating them fast enough so I needed a way to use them up. From now on I'll be buying extra plumbs for the express purpose of making this pie. I was worried about the top layer not incorporating with the filling, but it's perfect. It creates a crunchy sweet crust that is to die for.

Roasted Grapes and Carrots

Outstanding! I would never have thought of this on my own. I cut the baby carrots into thirds and boiled them until barely tender. Then I mixed them with the grapes, onion, cumin and olive oil. I also added a little sea salt before baking the mix for about 10 minutes. The grapes still had some pop to them and the onions were done. I sprinkled some fresh parsley on top and it looked beautiful. The perfect fall side dish.

Creamy Hollandaise Sauce

I'll tone down the leamon next time, but other than that, this is an easy delicious recipe. NOTE: Add all the ingrediants to the pot prior to adding the egg yolks and you'll find it much easier to incorporate the eggs without cooking them too quickly. Basically it allows you to whisk the eggs the entire time they're in the pot.

Cream of Broccoli Soup I

This is the perfect soup. My 11 month old daughter was like a little bird flapping her arms and opening her mouth when I fed her this soup and she literaly licked the bowl clean. I mixed about 1 1/2 cups of shredded cheese into the soup while it was still on the burner. This helped thicken the soup and added to the savorieness of the soup.

Ground Beef 'Wellington' with Fennel

Delicious. I used puff pastry since that was what I had. I skipped the fresh fennel since I didn't have any, but look forward to trying that next time. 30 minutes was plenty of time. Overcooking it will make it hard, so be careful.

Smoked Salmon Vodka Cream Sauce

This is tasty. Be careful not to over salt, as the smoked salmon will add a lot of saltieness to the sauce. This recipe makes a pretty small amount of sauce, so if you're serving more than 2 or 3 people, I suggest doubling it.

Vanilla Wafer Crust

Oven Fried Party Drummettes

These are incredibly tasty, crunchy and quick and easy to make. I took the advice of another reviewer and used half bread crumbs and half flour. These disappeared with in moments of my setting them down. I will prepare my wings this way from now on.
