Thighs on Rice

My husband can be a really picky eater, but he absolutely raved about this dish. Usually he doesn't say anything, but he complimented me three times on this. It's also very easy to prepare and simple enough that even my four year old cleaned his plate.

Gel's Green Beans and Beef

This was good. I substituted celery and green peppers for the green beans since I was out of green beans at the time. That worked well. I also added some seseme seeds after reading the other reviews. The ginger definately adds a big kick if you use all that the recipe calls for.

Fresh Herb Dinner Rolls

This was quick, easy and had excellent texture. The bread was a little bland unless you put a lot of butter on it, so I think I'll grind some sea salt on top of the egg white glaze next time or increase the amount of sugar I use.

Tiny Chicken Turnovers

This was absolutely delicious. I made the crust per the instructions provided and it didn't take much time at all. To keep the fork from sticking to the crust while I was crimping the edges of the pastry, I dipped the tines in flour and that worked well. I also added an extra ounce of cream cheese to the chicken and it came out smooth and flavorful.

Peking Duck

This was delicious. I didn't have time to make the plum dipping sauce and the duck was tasty without it. But I wish I had planned better and made the sauce while the duck was steaming instead of waiting until the last minute.

Apple Crisp II

I cut the apple recipe in half, but used the full recipe for the crumble on top. I also cubed the apples instead of slicing them. I think this makes it easier to scoop and eat. Then I baked the whole thing in an 8x8 pan.

Eggplant Croquettes

In my husbands words "This is the bomb!" He loved it, I loved our 4 year old loved it. I served them on a bed of mixed greens and drizzled blue cheese dressing over the top. It made for a very pleasing presentation.

Ground Beef Snack Quiches

These sounded like such a good idea, but they were very dry and not too flavorful. I think they would be better if you used a pastry dough for the crust instead of a "baking mix".

Baked Spinach

This was surprisingly good and I definately think it is worth using fresh spinich instead of frozen. I reccomend warming the milk before combining it with the melted butter so that the butter doesn't congeal. The cheesy top was crunchy and delicious, but it slipped around on top of the spinich when I tried to cut it with my fork. Other than that it was fabulous.

Slow Cooker Lentils and Sausage

My only problem with this recipe was the lentils. They were still a little on the crunchy side after 5 hours in my crockpot on high. Other than that, the flavor was excellent, so next time I think I'll just leave it cooking a little longer.

Beef Tenderloin With Roasted Shallots

This is amazing. My husband usually makes the sauces in our family, but he said I'm in charge from now on! When I was looking at the directions, they looked kind of long and complicated, but it turns out they are very easy to follow. They are presented in a very logical order so everything came together at exactly the right time. I served this with spiral noodles and drizzled some of the sauce over the noodles, they held the flavor well.

Baked Mushroom Thighs

My husband liked this, but I thought it was kind of bland. Next time I will definately add some salt and Italian Seasoning to the breading along with a pinch of flour. I cooked the chicken by placing them on a cooling rack over a pie pan. That way they were raised off the pan and the juices could flow into the dish without making a mess of my stove. I also flipped the chicken half way through cooking it so it was crispy on both sides.

Beef and Parmesan Pasta

This was fabulous. I used rotini instead of bowtie because it was what I had and I added my own spices instead of using Italian diced tomatoes. I also sauted the beef with a little garlic salt and some spices. This dish was tasty, and a complete meal all by itself.
