Peach Pie

This pie is awsome. I doubled the crumb mixture (but used about 1 3/4 c. sugar instead of a full 2 c.) I did not blanch the peaches, but as long as they're ripe they're easy to peal. I only ended up needing about 6 peaches. Next time I will slice my peaches a little thicker so they stand out a little more. I also used a full crust on top. I baked it at 425 for 12 minutes and at 375 for 30 minutes. Don't forget to put a baking sheet under the pie after about 30 minutes of baking so you don't get drips all over the bottom of your oven. DELICIOUS!!!!

Amazing Pecan Coffee Cake

Fantastic. I didn't have enough sour cream so I used about 1/2 sour cream and 1/2 plain yogurt. I also halved the recipe and it fit nicely into a pie dish. I still needed to cook it for the full amount of time.

Chewy Peanut Butter Chocolate Chip Cookies

These are chewy and delicious. To make them five star worthy I'm going to add a cup of chopped peanuts next time. Also, be careful not to over mix the batter or it will it will make the texture more cakey instead of chewy.

Grilled Salmon Steaks with Savory Blueberry Sauce

Tasty. But I think I'll reduce the vinegar by half next time or maybe substitute some red wine for it. I also added about a tablespoon of sugar to sweeten it just a little more. It looks gorgeous when drizzled over the fish.

Pear Pie III

This is good, but not amazing. I got a merang like crust on mine as well. I had placed a few pear slices on top of the pie before baking to make it look pretty and they sank into the custard and looked odd, so I recommend against trying that.

Dijon-Tarragon Cream Chicken

Superb. I marinated my chicken in a little Itallian dressing and white wine prior to preparing. Err on the low end of the cooking time. Even though it's chicken and you want to be careful, the chicken will cook more while it is setting on the side and will become tought and chewy if it's over done.

Yummy Bok Choy Salad

This is a fabulous treat. The various textures make it a delight to eat and the colors and variety of ingredients lead to a pretty plate. I didn't have any white wine vinegar so I used Sake instead along with a few teaspoons of regular vinegar. I also cut the green leafy sections of the bok choy into strips. I cut the white staulk into long rectangles and then I sliced the rectangles diagonally into spears.

Sandy's Chocolate Cake

This is the best cake I've ever made. The frosting is the perfect texture and spreads very well. Next time I think I will try using milk chocolate in place of the semi-sweet. I also brushed each layer of the cake with a mixture of 2 parts Torani Vanilla Syrum to 1 part water. My mother-in-law taught me this trick, it's the perfect way to keep a cake moist and delicious. ENJOY!!!!!

Broccoli Cheese Soup VI

Excellent. The cheese was all stringy and separate in the bottom of the pot at first, but gradually as the soup cooked it became fully incorporated. I used chicken broth that had salt in it and didn't need to add any additional salt like other reviewers have suggested.

White Russian Brownies

Tips: Bake at 350 for 40 minutes and the brownies will be perfectly done. Ease up on the vodca in the cream cheese. Once you have the layers in place use a knife to swirl all three together, then detail the top with a toothpick.

Green Salsa

Be sure to let this set in the frige for at least a few hours. This lets the flavors mix and mellows the onion and garlic. I put this on top of the White Chili I recipe that can be found on this site, a superb pairing. This salsa is incredibly refreshing, the perfect intro to summer.

White Chili I

Super delicious. I pureed one can of beans and added a second can of whole beans. I also used ground chicken instead of cubed. I garnished the chile with the Green Salsa recipe that may be found on this site. It adds an incredible freshness to the chile and makes it hard to stop eating.

Vanilla Wafer Crust

I used this as the crust for a banana cream pie and ended up with a slightly soggy crust. Perhaps it would have worked better if I had baked the crust a little first.

Crab Tartlets

The perfect appetizer: nice to look at and nice to eat. The phyllo shells are crunchy and the filling is flavorful, a very satisfying combination. I added some chopped baby shrimp to the filling and that added some extra color as well as flavor.
