Crab Tartlets

The perfect appetizer: nice to look at and nice to eat. The phyllo shells are crunchy and the filling is flavorful, a very satisfying combination. I added some chopped baby shrimp to the filling and that added some extra color as well as flavor.

Cheesy Zucchini Bites

Easy Vodka Sauce

With the addition of about 1 1/2tsp of sea salt this is fantastic. I pureed about 2/3 of the sauce after cooking it. This helped thicken it up a little and smoothed out the flavors. After pureeing it I just added it back into the remainder of the chunky portion.

Broiled Short Ribs

Melt in your mouth fabulous when I followed a previous reviewers suggestions: add beef bouilion and 2 tsp vinegar to boiling water and use your own sauce. When you do that and follow the instructions in this recipe you end up with ribs that disappear faster than a snowflake on a Georgia sidewalk!

Easy Lima Beans

Asian Barbequed Steak

Fantastic. I didn't think it was too salty as written and I let it marinate over night. The meat was super tender. Prior to marinating, I cut the meat into strips about 1 inch wide. Then when it came time to cook the meat, I skewered it on wooden squewers and grilled it. They made great appitizers because you could hold one end of the squewer and eat off the other.

These are good, but could use a little more flavor. Another tsp of vanilla or some spices or something. But the texture is perfect and they bake out nicely into neat little circles.

Eggplant Parmesan I

The best eggplant parmesan I've ever had. Next time I think I will double the ricotta mix. That will help use up the whole tub and will fill the cheese layers out more. Be sure to allow time for this to cool, as it will be soupy and hard to serve if you try to cut it directly after pulling it out of the oven.

Baked Cheese Sticks

I love the breading for these cheese sticks. I used string cheese sticks and froze them for about 20 minutes after breading them. I also deep fried them instead of baking. Super tasty, if a little messy.

These taste all right, but I think the middle is too runny. I stirred it for a long time in the double boiler and added some corn starch until it thickened a little. I was also careful to let the cookies cool completely. Even after that the tops still tried to slide off the bottoms of the cookies.

The Meatball that Fell Off the Table

These are very satisfying and easy to prepare. Just watch them carefully when you're cooking them in the covered pot as they will burn easily. Once I turned my heat down and got them to brown instead of burn I had a winner! They are a little crispy on the outside and cooked through on the inside. Savory and delicious. I skipped the white sauce/cream soup and served them with spagetti noodles and marinera sauce.
