Fresh Peach Cobbler I

Reviewed: Sep. 8, 2010
I doubled the topping used the smaller sized rectangular pan and left the skin on the peaches. Next time I will add some more spices to the topping.

Restaurant-Style Hashbrown Casserole

Reviewed: Aug. 18, 2010
I halved the recipe and kept the suggested pan size. I also cooked it at 425 which made the whole thing extra crispy and nice. I also added two giant spoonfuls of sour cream and I think that gave the whole dish a winning zing.

Blueberry Cream Muffins

Reviewed: Jun. 29, 2010
Very tasty and pretty. Fill the cups to overflowing (not only 2/3 full like you would for most muffins). Be careful not to over mix or they will be chewy.

Blueberry Crumb Pie

Reviewed: Mar. 26, 2010
A little too sweet. Next time I'll try using 1/2 c. sugar. I used frozen blueberries and they worked fine. The pie really needs to sit overnight to firm up. I added a Tbsp of cornstarch like others suggested. Next time I will try cooking the filling on the stove top for a little while first to help the corn starch set.

Crispy and Creamy Doughnuts

Reviewed: Feb. 28, 2010
Super amazing and delicious! The donuts aren't too sweet, but the glaze adds all the sweet you need. The dough is sticky, try to add no more than the suggested amount of flour or your donuts will be dense instead of light and fluffy. I ran out of glaze and will increase the recipe by 1/2 next time.

Waffles I

Reviewed: Feb. 14, 2010
Delicious with the following changes: 2 tsp. Vanilla, 3 Tbs. sugar. Mix up the batch in the blender, then it's easy to get the eggs nice and fluffy.

Good. Would be better I'd made some sweet and sour dipping sauce to go with them.

Golden Yam Brownies

Reviewed: Jan. 10, 2010
AWESOME! These are melt in your mouth moist and wonderful. But I think brownies is misleading, it's much more like cake. The glaze really makes this recipe too.

Lacking in flavor and not a great texture either. I will stick to my other recipe for scones.

Very tasty. I made the following additions: 1 extra egg (3 total) for a more cakey texture, 1tsp cinnamon, 1/2 tsp. nutmeg, 1/4 brown sugar and 1 cup chopped walnuts. Plus I sprinkled a lot of white sugar on top.
