Shrimp Po' Boys

Chicken Cordon Bleu I

Delicious! I used turkey ham and yarlsburg cheese. I also dipped the wrapped chicken in flour, then an egg/milk bath, then bread crumbs. I topped each roll with a pat of butter as others suggested. I also made the sauce others suggested (1 can cream of chicken soup, 1/2 c. sour cream, 1 tbs lemon juice, plus some milk to thin it). I heated the sauce on the stove and poured it over the chicken when it came out of the oven.

Luscious Spinach Artichoke Dip

I used a whole package of spinach and was generous with all the other measurements. I also added about 1 teaspoon of salt and at the very end I sprinkled the dish with bread crumbs and more cheese.

Banana Streusel Muffins

This is the perfect recipe. I've been searching for a long, long time and am thrilled to finally have found this. I used 3 bananas and 1/2 c. of plain yogurt since I only had 1/2 c. of sour cream. Next time I will also add some chopped walnuts.

Ground Beef 'Wellington' with Fennel

Delicious. I used puff pastry since that was what I had. I skipped the fresh fennel since I didn't have any, but look forward to trying that next time. 30 minutes was plenty of time. Overcooking it will make it hard, so be careful.

Pumpkin Pancakes

Tasty, but I'll reduce the allspice to 1/2tsp. next time. I followed the first reviewer's suggestions, using Bisquick. 1/2 the recipe should be plenty for my family of 4 next time.

Beef Fajitas

Next time add 1tsp. to marinade. Cut the meat into strips before marinating. When cooking, sweat onions and peppers, turn heat up full bore to evap. liquid. Throw meat in and get some char on meat and peppers. Whisk in a little corn starch. Before serving add liberally cumin, salt to taste and ground coriander, lime juice, tapatio hot sauce.

Strawberry Shortcake

I liked the texture and flavor of the shortcake. I stuck with the shortening, but only used 2tsp. of baking powder and increased the sugar to 1/4c. as others suggested. I divided the dough into 8 mini shortcakes instead of 1 big one. Next time I will cram them into a 9" cake pan so they can rise against each other and the sides of the pan. Hopefully that will give them a little more loft.

Old Fashioned Chicken and Dumplings

Tasty and easy. I quartered the recipe, except that I used the full biscuit amount. Next time I will use my own biscuit recipe. I also added some Paul Prudhomme's Polty Magic seasoning. The ingredients list and instructions weren't clear about how much flour to use for the thickening. I used 1/4 c. of water (since I quartered the recipe) and about 1/3 c. flour. That worked well.

Banana Nut Bread I

I used 1 c. of white and 1 c. of brown sugar. I added 1 tsp. of cinnamon and 1/2 tsp. of nutmeg. I substituted butter for the shortening and I increased the flour to 3 1/2 cups. I also added about 1/2 cup of wheat germ. I cooked it for 1 hour 5 minutes. The batter easily fit in two of my silver pans which are smaller than the recommended 9x5's.

Best Bread Machine Bread

I prepared this with my KitchenAid and oven instead of using a bread machine. It was delicious. I doubled the recipe and accidently let the yeast proof for about 30 minutes instead of the recommended 10. I think that turned out well.

I think other reviewer's suggestions of adding crab to the stuffing would probably make a substantial difference. Fresh herbs would also add some zing.

Mushroom Orzo

Easy Spaghetti with Tomato Sauce

Delicious. I followed another reviewers suggestion and used 1 can of sauce, 1 can of diced tomatoes and 1.5 cans of paste. It seemed soupy at first, but thickened up nicely after about an hour on the stove top.

Jicama and Melon Salad
