Best Pennsylvania Dutch Chicken Corn Soup

This is more like 4.5 stars because it was very salty (but good!). I skipped the dumplings and added carrots toward the end. Also used chicken breasts (which I then shredded), so less fat and less time since no skimming needed. Will definitely keep in my recipe box but use less salt next time.

Ruth's Red Lentil and Potato Soup

Delicious and healthy! Followed first reviewer's suggestion and boiled lentils before adding veggies for 20 more minutes. Skipped kale & file powder (yeah, what is that?). Used 40/60 mix of vegetable juice & water instead of broth since I did't have any. Added salt at the end. Soup goes great with cornbread.

Chicken Pot Pie I

I also used to slave over a home-made version, this is simple and tastes just as good. I only used one store-bought crust to cut calories, and also 98% fat-free cream of chicken. This is super fast if you have left over chicken. Also used left over corn and potatos (cubed, not mashed), frozen peas, and carrots boiled for 2 minutes in the microwave. It was so great there is none left for my lunch tomorrow!

Awesome and Easy Creamy Corn Casserole

Based on other suggestions, I cut sour cream to ~1/2c, added ~1/2c sugar, and baked closer to 1 hour. Final product was yummy, will certainly make again and again.

Chicken and Rice Soup II

Super simple! I used two raw chicken breasts and shredded them right before eating. Added instant rice for the last 10 minutes. Only criticism is that I would have liked a tad more salt.

Chess Cake

Based on other reviewers, I decreased confectioners sugar to 3 cups. This is a great dessert, and reminds me of a local Philadelphia favorite called "butter cake", but this isn't as runny and gooey. Excellent recipe!

Banana Muffins II

These are SO good! Very moist. I used 2/3c dark brown sugar instead of 3/4c white sugar, and I added 1tsp cinnamon + 1/2tsp nutmeg. I wish I had bought more bananas today to ripen for another batch next weekend!

Baked Garlic Parmesan Chicken

Very yummy. Only complaint is that the first few pieces ended up with way more garlic than the pieces at the end. Suggest just sprinkling the minced garlic after the chick is in the pan for more even seasoning.

Salsa Chicken Rice Casserole

Yum! Four cups of cheese seemed like overkill, so I used one 2-cup package of monterey/cheddar. I skipped the onions and added a few sprinkles of red pepper. I used uncooked chicken breasts and baked for an hour at 350...perfect!
