Easy Pumpkin Muffins

Turned out pretty well, but the recipe itself is flawed. As is, this recipe makes batter that is very dense, not the consistency of muffin batter. I added 2 eggs and about 1/3c vegetable oil to make the batter better, and about 3/4c chopped walnuts for fun. I also would have liked about twice as much of the seasonings for more flavor. Overall ok, nice and moist but not a strong pumpkin flavor. Finally, these were enormous muffins, but still cooked completely for the recommended 25 minutes.

Grilled Salmon I

I cheated: didn't marinate due to lack of time, and used the oven instead, but it still turned out well. My fiancee wasn't a fan of salmon, but he loved this. Will make again.

Microwave Oven Peanut Brittle

Pay attention to instructions! I managed to put a hole in my mom's hand-me-down 30-year-old Tupperware, but I wanted new stuff anyway :-) I did get one good batch that tastes great, like it was bought from a candy store. I can't wait to see my family ask for the recipe and surprise my grandfather for father's day. Peanut brittle is one of his favorites.

Gnocchi I

My husband & I had been looking forward to my making this, and I am very disappointed. This is nothing like what I had when in Italy. This was very bland and chewy. I will not make again :-(

Very good, will make again. I used 2% based on other comments, it came out fine. Not as thick as a cream-based soup (versus broth-based), but still a keeper.

Cheesy Salmon Pasta

My husband and I really liked this. My only complaint was that the pasta wasn't really coated with anything, a bit more "sauce" would have been nice. A very healthy and new way to eat salmon!

Slow Cook Thai Chicken

My husband liked this, I hated it. I used low-salt soy sauce and coconut milk instead of chicken stock, but I still found it salty. The sauce was overpowered by the cumin, I couldn't taste the peanut butter.

I wasn't a huge fan, but my husband liked this and so did the woman hosting the party I brought the beans to. It does make a lot, so I'll probably save this for big occassions and not make it for just the two of us.

Absolutely wonderful, will make again and again. Only change was way less butter to make it a bit healthier. Next time I'll try plain breadcrumbs instead of the Italian kind.

I would give this a 3, my husband a 5, so 4 is the average. I thought this tasted like jazzed up baked ziti, nothing special. I was also disappointed by the lack of cheese flavor (I used fresh grated parm, and 2x the recommended amount). I have to admit I cut the red pepper to 1/4 tsp because I can't handle spicy foods.

This was very good. Freshly grated parmesan added great flavor. The only thing I didn't like was the oiliness/greasiness. I might skip the mayo next time.

Sweet Potato Casserole II

This is truly fantastic, I didn't change a thing! Don't save it just for the holidays, I'd eat this anytime. It went especially well with pork chops, since the sweet balanced the salty.

Everyone liked this, I thought it was a little bland. Next time I might add the worsteshire (sp?) sauce or try beef gravy instead of beef broth or add minced garlic. I didn't mash the carrots (yuck), added some leftover corn I had, and had to sneak a little milk into the potatoes.

Chicken Curry I

Excellent! I used 1 pound chicken breast chunks, halved the curry since 3T seemed like a lot, halved the cayenne since I'm a wimp, and used only a small amount of onion/oil. Using other reviewers' suggestions, I used 2c chicken broth instead of water and added diced carrots for the last 5 minutes and served over rice. No, I didn't follow the recipe exactly, but the end result was delicious.
