Black Bean Vegetable Soup

I made a few of my own minor modifications according to dietry issues. This is delicious! Very healthy choice without feeling cheated out of good flavor and a sense of variety!

Corned Beef Roast

Oatmeal Banana Nut Bread

This is the best ever! I did modify by using 1 cup flour, 1/2 cup ground oatmeal and 1/2 cup whole wheat flour. I also added 3/4 cup chocolate chips.

Sweet Bacon Dogs

OMG!! These are THE best! I have to be careful when I make these, or I could easily eat the whole panful. Took this to cookout and everyone raved! My boss's husband only wants these now when he's watching football. Will have to try with little smokies!

Gumbo Style Chicken Creole

Outstanding! Very flavorful. I omitted the mushrooms and added celery. I also took the advice of others and added 1 1/2 cups of chicken broth. It made for a better soupier consistency. Also, in my experience, roux made with butter is much better than making it with oil. You can even use products such as Smart Balance if you are watching fats and cholesterol.

Salsa Chicken Skillet

Delicious! The beauty of this recipe is how easily you can tweek it to your own taste. We're eating more low-fat and this certainly makes it easy to stick to eating low-fat without sacrificing good taste! Thanks!

Okra Patties

Tasty! You will likely need to season to your taste though... more salt and pepper along with garlic powder, cayenne pepper and paprika seem to do the trick. Will likely use this recipe again in the winter, using frozen okra, to satisfy my cravings. Thanks for sharing!

Split Pea Soup

Very good soup! Add this to your list of comfort foods during cold weather. The split peas I use do not require soaking. Check your label, it may save you a few steps and time.

Cucumber and Dill Pasta Salad

I love this recipe! A friend made this for me once and I had to search to get the recipe. I make it with cole slaw dressing and sour cream (have to mix to taste). It's a nice light pasta salad with a delicate taste, goes great with BBQ.

Very good for as easy a recipe as this is! I like to use meat seasoned with taco seasoning. Can adjust the total # of servings if you have left-over taco meat to use up.

California Smoothie

Cabbage Roll Casserole

This is a good substitute for actual cabbage rolls. There's nothing as good as the real thing, but this should satisfy that Hungarian/Polish craving. Keep in mind that most cabbage recipes are not meant to have over-powering flavor. They do tend to be slightly bland. If you seek tons of flavor this is probably not the recipe for you. This is a somewhat ethnic comfort food. I love it, thanks!

Aunt Jewel's Chicken Dressing Casserole

I really enjoyed this. It's good easy comfort food. I did reduce the soup to one can cream of chicken and added some celery and onion to the water when boiling the chicken. After the chicken was done, I strained the veggies out of the stock and added them to the stuffing along with a teaspoon of chicken boullion added to the stock used to mix with the stuffing.

Berry Surprise

Wow, is this good! I'm trying new ways to get my kids to eat fruit and this smoothie will defintely help. I had to modify by using 3/4 cup ready to drink lime-ade and added 1 1/2 tablespoons of lime juice. I also added a tablespoon of sugar. It tastes like a slushy, only better!(only drawback is the seeds) Of course, you should be using frozen berries when you make this.

Brown Sugar Meatloaf

Now this is the way I like it! I slightly modified the recipe, using 1/2 cup milk, club crackers, dried minced onion and approx. 1/3 cup brown sugar with 1/2 cup ketchup & 2 tablespoons of mustard for the glaze (no ginger). Baked for 1 1/2 hrs. A definite keeper. Thanks!!!

Yummy Lasagna

Gotta love it!! I used Barilla no boil noddles and italian sausage in place of ground beef. Very hearty and tons of flavor! The pepperoni and sausage together give it a nice zing.

Mexican Layered Dip

Can you say... YUM!! I'd been craving this dip awhile and decided to make it as a side dish with taco salad and burritos. Goes together fast and ready to eat after about 20 min. in fridge. Tastes even better if allowed to refridgerate longer.

Fresh California Salsa

Just made this with garden fresh tomatoes and jalapenos. Couldn't get fresh cilantro so substituted dried. Turned out wonderful! We like our salsa a bit spicy, so I put in 2 jalapenos and added some ground cayenne pepper to taste as well as a pinch of sugar. Tastes better the longer it sits!...if it gets a chance to! We plan to can this one for winter.
