Health Nut Blueberry Muffins

Phenomenal! These are so soft and fall-apart moist! I didn't have oat bran, so I threw in a 1/4 cup of milled flax seed instead, and a tablespoon of lemon juice (for the blueberries). I also whipped up 4oz of fat free cream cheese with a about a tbl of powdered sugar, a tbl of lemon juice and a 1/2 tsp of vanilla to make a frosting . . . and they are decadently delicious! I'm just hoping I can keep some hidden away from the kids until the hubby gets home to try them! Thanks!

Broiled Tilapia Parmesan

Absolutely amazing. Even my kids love this recipe, and normally I have to lay the smack down to even get them to even consider fish. This will be on regular rotation in my house. Thank you for the fabulous recipe!

Brown Sugar Meatloaf

Have made this many times now, and everytime it comes out amazing. And I only tried it cause hubby loves meatloaf! Lo and behold, this is now one of may absolutely favorite recipes--the flavor and texture is superb. The only things I have changed is the put some sauce on the bottom per the recipe, but the rest I use over the top as a glaze. I use Italian breadcrumbs instead of saltines. Thank you so much for this recipe!

Butternut Squash Bisque

To die for. Made it for a dinner party, and it was so rich, elegant, and Delectable! I tried it before and after adding the cream. Before it was very distinct, fresh, and spicy. After it was so incredibly creamy and decadent. Eat it either way, this stuff is superb!

Cream of Pumpkin Curry Soup

I loved the scents that filled my kitchen when I was making this--exotic and delicious. The final result had a very strong curry flavor, almost too strong by itself (I served this with a hearty Irish Soda Bread, good dipping!). My husband despises pumpkin though, and isn't a huge fan of curry either, but he really enjoyed this. I did forget to put that dollop of sour cream on it though. Today I had the leftovers for lunch, and remembered that addition; it really helped tone down the curry flavor--then it was really good. I pretty much followed the recipe to a tee, but I did use cream as opposed to half and half. It had an awesome texture. This is a great autumn/winter comfort soup for a cold day.

Autumn Salad

This was absolutely delicious! The only thing I changed was using walnuts as opposed to pecans because that's what I had in stock. I used red leaf lettuce and a little bit of fresh spinach; all around it had a lovely presentation. (I served this with Creamy Curried Pumpkin Soup and Irish Soda Bread, also found on this site.) I was intrigued by the idea of the pear and cream cheese mixture as the predominant dressing agent in the salad: it was delectable. The hubby also liked it, although my roommate (who's favorite food is Kraft macaroni and cheese) thought there was "too much going on with it." To me that was final proof that although the salad was simple to make, it comes off as beaufifully complex and a delight to multiple senses.
