I am a happy go lucky person that loves to cook. I love flavorful foods and there isn't much I will not eat! You always have to try something first before you can say you don't like it.
My favorite things to cook
Homemade Mac and cheese, fried chicken, fried shrimp, mediterranen chicken, Creamy Mushroom Chicken and rice, Spaghetti with homemade meatballs, and Meatloaf.
My favorite family cooking traditions
Growing up, I ate a lot of very heathy, very bland foods (my parents were health nuts at the time!). Once I got out on my own and discovered the joy of cooking with spices and flavorings, there was no stopping me! I do not like bland, tasteless food!
My cooking triumphs
One night we had run out of groceries due to a busy week. I had chicken breasts in the freezer so I took them out and lightly browned them in olive oil, shredded them and returned them to the pan with 2 cans of mexican tomatoes. I served it over rice. It was awesome and next time I am doing the same thing, but serving it in a quesadilla!!
My cooking tragedies
I tried to use a recipe on the back of a stuffing box one time and it looked excellent on the box. When I made it, it turned out looking gross, and it was really mushy. Since it had broccoli as a main ingredient, the broccoli totally overpowered everything else! I was upset!
