About this Cook
I live in a household of 4 and one of us has Celiac Disease so I do my best to come up with tasty gluten-free recipes for her! I myself am lactose-intolerant so there's nothing more exciting than finding a great recipe that is both lactose-free and gluten-free! My dog Harley (now 1 1/2 years old) helps me in the kitchen to clean up messes on the floor and also as a pre-dishwasher rinse. My boyfriend serves as a supervisor... tough job!
My favorite things to cook
I love to try gluten-free recipes or to alter regular recipes and create something gluten-free. I also recently started baking and I find it challenging to bake gluten-free and maintain the same taste that we are all so used to. One thing I seem to have a knack for is homemade soups and roasted chicken or ribs!
My cooking triumphs
Homemade chicken soup, curried squash soup and many others! Thankfully more successes than failures in my kitchen.
My cooking tragedies
I once baked 3 really awful gluten-free cakes in one day! Very sad day for me... I also dropped a roasted chicken on the floor on one occasion and completely burned garlic bread on another.

Banana Loaf Cake I
This was pretty good, I followed someone else's advice and covered the loaf with foil for the last 15 minutes and it turns out extremely moist! I also added 1 tsp of cinnamon and a 1/2 tsp nutmeg. I tried it with Bob's Red Mill Gluten-Free all purpose baking flour as well and it was so moist and flavourful.

Butternut Squash Soup II
I also found it bland so I added some heavy cream, garam masala, 2 bay leaves left to simmer, a dash of curry powder and a pinch of cayenne. I put about 75% of the soup into a food processor to leave some chunks.

Baked Ziti I
Pretty great recipe! I replaced the noodles with corn pasta to make it gluten-free and it was delicious.
