Banana Banana Bread
I can't have eggs or dairy and was looking for a recipe for banana bread. I just made this recipe with a few adjustments, and it was fantastic!! I used milled flax seed instead of eggs (6 tablespoons water 2 tablespoons milled flax seed), subbed some oatmeal for flour, 1 cup old fashioned oats and 1 1/2 cups organic unbleached flour, and 1/2 cup veg oil instead of the butter, and 2 handfuls of chopped pecans. I baked it at 325 for 30 min and then let them cool on a baking rack in the oven after turning it off. They were delicious! Thank you Shelley for such a great recipe!

This was very good, I made some changes for our taste, and by looking at other harira recipes. I will be making this again. Thanks for adding this recipe and bringing a taste of Morocco into our home!

Coconut Tilapia with Apricot Dipping Sauce
I'm really not a fan of fish but I know it's healthy so I try to incorporate it into our diet (occasionally) :) When I saw this recipe I was excited to try it since I love coconut shrimp. I took the advice of others and used tongs as well as baking them at 350 for 25 minutes. I sprayed a pyrex dish w/ Pam and also sprayed the top a bit. Also I soaked the fish for 30-40 min in "buttermilk" (2 cups milk with the juice 1 lemon squeezed in). It helped get rid of any fishy taste/smell. The sauce was amazing!!!! My husband said he felt like we were eating at Tommy Bahama :) I served it with steamed broccoli sprinkled with a little seasoned salt. We loved the entire dish, thank you so much for posting it!!
