Tried this tonight. Did not have lemons or fresh rosemary, so ... I sprinkled lots of lemon pepper in the chest cavity, and then I made a paste of softened butter, lemon pepper, and ground rosemary and spread that under the skin over the breast. I listened to the other reviewers and poured a little of the wine mixture in the pan from the start. Oh, and I used butter instead of olive oil. We loved it - in fact my partner wants to have it again later this week, using a regular chicken so he can eat more!
