Addictive Sweet Potato Burritos

I would have given it only four stars, but with my changes it was great! I used the same amount of sweet potatos but used black beans: one can refried and one whole. I also used more cumin with lots of cilantro. They were great with chopped tomatoe and bell pepper!

Cashew Raisin Rice Pilaf

I had less rise than I thought, and used about half rice half couscous. Also, I only had whole raw almonds, so I chopped those up in place of cashews. It tasted realy good and the sweetness of the raisins was a nice addition to a savory dish.

Who knew risotto could get any better? I used this to get rid of left overs, and it was great. I didn't have a deep frier so I pan fried them. They were a little lop sided, but tasted great.

World's Greatest Vegetable Broth

Making this broth made my apartment smell great! It was great for risotto, when the most important thing is the broth. I made a double batch, reduced it by half, and then froze it in ice cube trays.

Amish White Bread

As is I give the recipe four stars, but with my variations five. I cut the sugar in half and subed a cup of flour for hazelnut meal. The hazelnut meal gave it a slightly sweet and nutty taste plus it looked great with little fleck of brown.

Cranberry Sauce Extraordinaire

This was really good. It made a perfect side dish. I used trail mix and only a quarter of the sugar. In place of water I used apple cider. With that and the dried fruit all the sugar wasn't needed.

This is great! Lots of zing and just the right amount of sweetness. Don't over do it in the oven though, I did the first time and it got all puffy and ugly - but still tasted good.

Zucchini Patties

These were amazing! Really really good. I put in more zucchini than the recipe called for and I used dry TVP in place of the bread crumbs. They don't change the taste and add lots of protine. I added chopped red onions too. The only problem I had was the mixture didn't hold well. To fix it I mixed in the flour rather than dredging the patties. I made a ton of them and froze them for future use. They are such a good idea for all the extra garden zucchini that my boyfriend's country grandmother asked me for the recipe.

Stuffed Acorn Squash Supreme

I only give it 4 stars because I really didn't make this recipe, but just used it as a guide and it rocked!! I liked the sausage idea. For the stuffing I used a mix of brown and wild rice, fresh cranberries, a sweet gala apple, and soy breakfast links. I shredded a bit of gruyère on top and baked it for 30min. It was super duper good!! And the stuffing made so much that I took the extras to work the next day as a rice salad.

Creamy Macaroni and Cheese

I'm not sure what I did wrong. I followed everything to a T (though I did use un-chicken broth), but the texture was all wrong. Instead of creamy it was sort of grainy. Like the cheese didn't melt properly. I baked it for about 30 min. The cheese wasn't creamy or stringy but it tasted really good. The broth gave it a more earthy and complex flavor. Yummy.

Kentucky Bourbon Sweet Potatoes

This was really good. I cut the amount of sugar in half and added a quarter cup of honey for a more earthy flavor. I also covered the dish as others had suggested and mixed the potoates every 15 min. The only other thing I'll change for next time is to broil them with out the foil cover to have some crispy tops.

Chickpea Curry

This is really really good, and even better when you add bite-size raw apple. I prefer a sweet varity; it has a nice contrast to the curry. It gives the texture a nice bit of crunch too. And as I like apples, I put a lot in mine.

Shoepeg Corn Casserole

This was pretty good, but the veggie amounts listed in the recipie were a bit sparse. I nearly doubled them all and added onions and garlic. I also mixed sliced almonds in to add some texture and used them as the topping. They added a great crunch (not to mention the health benefits) and browned very nicely.

Lentil Loaf
