These were soooo good. I made them for my parents and we all loved them. I marinated the chicken and veggies separately for over 24 hours, and doubled the marinade as others have suggested. I used red, orange, and yellow bell peppers, white mushrooms, Vidalia onions, and both Cherub and Sunburst tomatoes. I also put in a little bit more honey than the recipe called for, and I used ginger flavored soy sauce. The chicken stayed really tender and moist, and Dad grilled them to perfection. I'm definitely doing this again later this summer, using fresh zucchini and onions from the garden!
