Black Bean Hummus
Ok, so first of all I used 3 cloves of garlic; I like garlic! I agree with the liquid, but only used 1 & 1/2 TBSP, and the same amount of olive oil, as another reviewer suggested. Also, as suggested, I rinsed the beans. I used the juice of 1 small lime, so about 1 1/2 TBSP or so. I liked the kick of cayenne; curious to see how it tastes tomorrow; in my experience, these types of things (lots of fresh, bold ingredients) need to sit together over time to truly come alive. :) Update: my hummus-obsessed work mates loved this! I did not do the olives; the flavor did mellow, and the cayenne wasn't too bold, except for one friend who is not fond of spice anyway.

Best-Ever Cornbread-Sausage Stuffing
My cook time was different, 325 for an hour, but the bottom was a little overdone. Favors are GREAT! Agree with hot sausage comments, even my spicy-sensitive 82 year old Grandmother liked it. Also, it made approximately 5 quarts- 9 x13 & smaller 6" rectangular pan, 2 quart size. I'll definitely try it again, was great leftover too!

Three Cheese Garlic Scalloped Potatoes
Ok, just put it in the oven, update to come! So far, will need double the cheese & garlic. Used a 9x13 dish, and 6 slices of provolone (not 4). Milk seemed fine, covered as well with foil. Update once done! Ok, after 30 minutes, potatoes are hard; cut them on a mandolin-type thingy; are they not thin enough? Going another 20 minutes, but seems soupy....update to come! I got impatient after 17 minutes; potatoes more done, but still need more. Nice browning cheese on top! Seems greasy though....concerned about this.
