Cucumber, Tomato and Red Onion Salad with Mint

Very refreshing and flexible. Used regular sugar instead of SPLENDA and it was great. I will be making this with fresh basil on Italian night, with oregano on Mediterranean night, and with dill on fish night. Gotta love a recipe like this!!! All those cucumbers from our garden will find a home besides the pickle jar this year.

Bowties with Italian Sausage in a Cream Basil Sauce

All I can say is Wow! So tasty and such a really easy dish to make. This is a keeper for sure. Just the right amount of heat balanced by the cream and comes alive with the fresh basil. Well done!!!

My Chili

I must have made a hundred chili recipes over the years looking for one just like this, simple and so tasty!!! Most chili recipe's have way to many ingredients. Just as it is is so good, but easy to tweak like adding a little cumin or a couple chopped peppers. Very Good !!!

Fast Chicken Soup Base

Soup can't get any easier than this. It is what it says "a fast chicken soup base." Very delicious, i added some noodles for my wife who was a little under the weather. Just right!!!

Scallops with White Wine Sauce I

The idea of this recipe is great, and from tasting as I cooked it was very good, until the butter. I HIGHLY suggest no more than one or two tablespoon of butter. My instincts told me 3/4 cup would be overwhelming but I did it any way, I was left with $17 worth of buttery scallops and clogged arteries. My doc is going to kill me when he checks my blood again, lol.
